Caraway Cheese Ball

Fantastic! Great recommendation. I'd never made a cheese ball before either, did put a bit of extra Caraway into it, and made it at Thanksgiving. Everyone ate so much they almost didn't eat any turkey!

Chicken Wing Dip

This is ALWAYS a hit, whether it be a BBQ, a girls' night, or a football party. EVERYONE loves chicken wing dip. Also--I use lowfat cream cheese, lowfat blue cheese dressing, and 2% cheddar cheese to make a lower fat version of this . It is still fantastic.

Mini Cheesecakes

These are awesome. The filling is delicious! The nilla wafers end up puffy and cake like, which I love. My husband, on the other hand, calls them "soggy vanilla wafers" and though he LOVES cheesecake will not eat these. Men! Ugh. ;)

Southern Dill Potato Salad

I love dill and thus added a TON more than called for. I also used sour cream and mayo because I don't like the idea of mayonnaise. The result was delish, but the day after it was a bit runny. I think because of the sour cream.

Chewy Maple Cookies

I did not have the problems other people are mentioning. They're called "chewy" cookies for a reason, people. Chewy cookies are always a little flatter than standard cookies. That being said... I did add 1/4 cup of flour, not because of others' suggestions, but because I live at 6000ft. and I was making my own high altitude alterations. I also reduced the heat to 350 and cooked for 9-10 minutes. (Which was weird because high altitude usually = longer cooking time)

Ken's Perfect Hard Boiled Egg (And I Mean Perfect)

Quite possibly the biggest disaster I've ever had. The skin stuck to the eggs, and I had so many divets in them once pealed, they are useless. My Easter is ruined.

Quick and Easy Green Chile Chicken Enchilada Casserole

I made several alterations to this recipe. First--I marinated the chicken in a lime-cilantro marinade. (1/2 cup of finely chopped cilantro, 1/2 a fresh Jalapeno, seeded & grated or finely chopped, Juice of 1 lime, 1/4 cup of olive oil, Garlic Salt to taste). I baked the chicken as instructed (350 for 45 mins.) Second--I made my own Taco Seasoning (Taco Seasoning I) and mixed it into the sour cream, which I also mixed with the diced chicken. Third--I added 1/2 cup of finely chopped cilantro and 1/2 a fresh Jalapeno grated or finely chopped to the Green Chile Sauce. Fourth--I used a "Mexican" cheese blend instead of Monterey Jack Lastly--I quartered the corn tortillas in strips, which I did not char. The meal was served with extra Sour Cream and homemade Guacamole, and a Mexican Bean salad on the side. Mmm....
