Flourless Peanut Butter Cookies
I used to make these all the time and followed the recipe exactly. The resulting cookie was very tasty but a bit crumbly and sandy. I recently tried again and used 1/2 cup brown sugar and 1/2 cup white sugar, and a little bit of vanilla extract. It resulted in a chewier, less fragile cookie. I also always use a little more than a cup of peanut butter, usually about a cup and 1/4, and I prefer to use chunky peanut butter! Cookie is also good with chocolate chips mixed in or jam on top.

Banana Crumb Muffins
These were quite good, but I had some problems with the crumb topping. I took the suggestion of adding the topping in the last 5 minutes of baking, but the muffins had raised so high that the topping just toppled off the muffin. In lieu of the crumb topping, I ended up topping the muffins with cinnamon sugar. Aside from that fiasco, they were a huge hit. I used 4 bananas, and added a bit of cinnamon to the batter. Next time I think I will add vanilla as well, maybe more cinnamon, and perhaps some more spice.

Beth's Spicy Oatmeal Raisin Cookies
I am pleased with how these came out. I used 3/4 cup butter and 1/4 cup regular shortening, because that's what I had on hand. I also added some shredded coconut that I had leftover and wanted to get rid of. Also, I added some nutmeg. The only thing disappointing about these cookies is that they did not rise very much. They still tasted great, though. I think next time I will chill the dough.
