Vegetable Pizza I

Tasty! Note, do not do as I did the first time and use "low fat" and "no fat" items. It really subtracted from the taste. The second time, I went all out with the "full fat" items, and it tasted SO much better. Hey, it's still healthy-ish ;)

Delicious Black Bean Burritos

I have made this recipe several times, and I love it as is. I add more fresh ingredients that mesh well with the flavors if I have them on hand, the more the merrier. I've made it for company as well, and every time the recipe gets rave reviews. Personally, I feel like the amount of mixture this recipe makes is way too much for just two burritos, but that's just me. We use it as more of a soft taco type of dish, and if there are leftovers we use it as a bean salsa. YUMMY!!

California Grilled Veggie Sandwich

I've made this recipe five or six times in the last few months, and I have to tell you. It's AMAZING. It is a favorite for both me and my husband, and I always think about it all day when I know it's what we're making for dinner that night!!! For my meat eating husband, we add grilled sliced chicken. If we for some reason can't grill, I will broil the vegetables in the oven on a regular pan. Totally delicious either way.

Lasagna Roll Ups

When I make these, I eliminate the tofu. I made it once with, but ultimately, the bulk it adds isn't needed. I keep half of the mixture meat free, and add browned Italian sausage to the other half, to please both the meat eaters and the vegetarians. I use double the amount of pasta sauce called for. Hot tips on making rolling super easy. 1. After cooking pasta, let it dry on paper towels. This helps a lot. 2. DITCH THE SPOON. I tried all of the different methods I read in the reviews, but really, just wash your hands and smear the mixture on. It's ten times faster and easier to get better coverage. It's messy no matter how you do it, you might as well do it effectively.

Rich Pasta for the Poor Kitchen

I've made this recipe several times, and have passed it on. It's so good! I have modified it a bit per the other reviews. I add a lot of freshly diced tomato (I love tomato). I add a splash of heavy cream and a bit of cornstarch to make a bit more of a sauce, and do more garlic and spices than called for.. Overall, it's delcious.

Slow-Cooker Chicken Tortilla Soup

I've made this recipe at least 20 times in the past year for just my family and for company. It's always a huge hit. I've shared the recipe many times. I use broth instead of water, and throw frozen chicken breasts in, and just shread them an hour before serving with a fork. We eat it with sour cream and premade tortilla chips. Yummy!

Brown Sugar Meatloaf

My husband loves this recipe and requests it if it's been a while since I made it. He even made it for me once as a surprise! I form the meat into a loaf, and set it on a couple of pieces of bread in a glass baking dish that I've lined with foil. The loaf keeps it's shape. I spoon the liquid once in a while back onto the meatloaf while cooking as suggested. Perfection, and easy to clean up!

Baked Slow Cooker Chicken

Delicious! If you want to make it yourself, this is the way to go. I must say though, you can get them already delcicious and cooked at the grocery store for about the same price. Sometimes it feels good to make it yourself, and sometimes you just want to save the time.

Chicken Pot Pie IX

I've made this recipe around ten times now without altering the ingredients and it is wonderful as is. My husband requests it if it's been too long since the last time I made it! My grandmother commented that it was the best she'd ever had.

Chicago Macaroni Salad

I made this recipe without altering the ingredients at all, and it was wonderful as is. It was for a large birthday party and several people asked me for the recipe afterwards. It's a bit different from what we're used to in this area, but delicious.

Taqueria Style Tacos - Carne Asada

WOW! These are AWESOME! I had a party and made these to fancy up the traditional taco night, and they were a huge hit! One change I made: I wanted to make my own tortillas, but didn't think I'd have time to do it all. I decided to save time by not making the tomato based salsa. I instead bought a really good pre-made jarred salsa for that portion of the recipe. I did, however, still make the onion/lime juice/cillantro salsa, and trust me, you don't want to skip that! They were absolutely delicious even with store bought red salsa, and I feel it was worth it to be able to have homemade tortillas. Next time, I'll try to budget time to do it all! Trust me, there will be a next time!

Slow Cooker Chicken and Dumplings

This is really good! I made it for dinner last night, and my husband loved it. I shared it with several people at work today, and they're all going to go home and try it out. I didn't modify it that much. I did make a larger batch than the recipe calls for, and cooked the dumplings for much longer than called for because of the complaints of uncooked dough I read repeatedly. It was great as is, it didn't need any veggies besides the onion, which I thought it might. Loved it!

Fabulous Wet Burritos

This recipe gets extra points because it is the only recipe that my brother has ever requested I make. He usually doesn't have much of opinion on what I serve when he comes over, but he's requested this again and again. That may not sound like a big deal... but if you knew my brother you would know that it is :) I did follow some of the changes that others suggested (eliminated tomato soup especially just because that sounded nasty) and I will add fresh ingredients that mesh well with these flavors if I have them on hand. Great starting point.

Snickerdoodles V

These are delicious, but different shape from what I think of as a "traditional" snickerdoodle. The texture is a little more dense, not allowing them to widen and flatten out while baking. I tried flattening them out myself before baking, but the dough just crumbled when I did. No matter what shape you're expecting, the taste is perfect!
