Heavenly Angel Food Cake

Made this for a guys birthday and he went nuts. I didn't have any almond extract at home but I'm excited to try it when I have it on hand. Also, this recipe was a breeze with a kitchenaid mixer. There were multiple times where I thought I had screwed everything up and it came out divine.

My room mate can not get enough of this stuff! It's a really easy thing to quickly throw together and then wait for it to cook while reading. Good heated up later too.

Black Bean Brownies

These were interesting, I didn't have a blender on hand so I just smashed them by hand as well as I could. It was definitely an interesting flavor but they were really light and filling. Give it a try, it's not like they're hard to make and they're inexpensive to make.

Brooke's Best Bombshell Brownies

So yummy! There was so much batter, way more than you would ever get in a bagged mix. Took as much time as a bagged mix too and yet they were way better. The best part about it is that you always have all of these items on hand.

They tasted good but I thought that they were just a little too tough. It may have been because I didn't use shortening and instead just used butter so that might have made a huge difference.

Chocolate Eclair Cake

This turned out really well. People were really impressed and they compared it to tiramisu. I was a bit skeptical of how it would hold when it was dished out but it came out pretty easily. I can't imagine using canned frosting though, with the pudding mix and frozen whipping cream already being so processed.

Caramel Apple Dip

Sometimes simplicity is best! It was really great, not too sweet and not too thick. I served it at a college art reception and it went over really well with the students and parents. The one issue that I did have was that I didn't get the cream cheese super smooth before mixing in the caramel but i think that's a bigger issue with my patience than the recipe.

Apple Crisp Cups

I thought these were a pretty cute and nifty idea, but I modified a lot of it. First off, I used only 1/2 cup of butter because I thought that 1 1/2 was a little excessive. I also added a sprinkle of clove to my apples which turned out really great. Then I added vanilla into my crust and right before I put them into the tins I mixed in about an eighth of a cup of honey. I also used about half as much sugar as called and they seemed perfectly sweet. Really nice portable version of apple crisp.

Broccoli, Rice, Cheese, and Chicken Casserole

It's okay if you don't want to put too much effort into your meal for the night but nothing that I would share with a friend. And processed cheese and canned chicken, really? Ick. I used some cheddar instead and an actual chicken breast instead.

Tofu Parmigiana

This was so amazing! All I changed was dipping in eggs before the crumbs and refrigerating instead of the cold water and it turned out amazing! All the carnivores and vegetarians loved it.
