About this Cook
A 20-something out to tackle the world, I learned quickly that I would need to be able to cook more than macaroni and spaghetti to survive. I watched a lot of TV shows, read some good cookbooks, and slowly but surely, I've been teaching myself to make delicious food. I've also found that cooking is just about my favorite form of stress relief
My favorite things to cook
My favorite kitchen projects usually involve baking. I have a huge sweet tooth, so I'm constantly whipping up a new cookie, bar, or other dessert delight.
My favorite family cooking traditions
My love of desserts probably stems back to spending hours in the kitchen with my mom every holiday season, baking batch after batch of cookies. We always had fun decorating sugar cookies and 'taste testing' the chocolate chips!

Delicious Ham and Potato Soup
Holy. Cow. This was fantastic! I needed to use up potatoes and ham, and this sounded good. I didn't have celery, but I threw in a few cloves of garlic. I was lazy and didn't peel the potatoes. Added some Mrs. Dash, half a bay leaf, and some parsley while the potatoes were cooking. Left out the extra salt- the ham is salty enough. The white sauce came together beautifully, which NEVER happens for me (I used skim milk). Stirred it all together, dished up with crackers and shredded cheddar. I SWEAR this tastes better than most restaurant potato soups. I like that it isn't totally creamy- just smooth. I'm seriously looking forward to the leftovers for lunch tomorrow. Definitely making this one again!

Pumpkin Apple Streusel Muffins
Wow delicious! I used a stick of melted margarine (hate the taste of veg oil in baked goods), 1 c white and 1c brown sugar, and 1 1/2 c whole wheat and 1 c all-purpose flour. I diced up 1 Granny Smith and 1 Gala apple into pretty small pieces. Baked them without the streusel topping for 30 minutes. I got 17 delicious muffins out of this! They have just a little bit of crunch around the edges, the yummy pumpkin and spice flavor, and the little surprise sweet bites of apple. This is going in my recipe binder for sure! A word of advice: the batter takes some mixing to get everything moist. I almost added extra wet ingredients because it wasn't coming together right. I'm glad I didn't- these came out perfect as written!

Diana's Hawaiian Bread Rolls
As it stands, this is 4 stars. With a few changes, 5 stars, easily! I cut the water back to 1 1/4 cups, used only vanilla extract, and used 2 Tb of honey and no molasses. Before I put them in the oven, I brushed them with a beaten egg. They come out fantastic every time- they're actually even more delicious the next day! I usually get 18-24 dinner-size rolls from this recipe.
