Real Pumpkin Pie

I was worried at first because it came out of the oven really jiggly but the knife came out clean and the crust was beginning to singe. After sitting on the counter a bit and then being transferred to the fridge to cool and finish setting it thickened to satisfaction. I haven't tried it yet (waiting for a potluck tomorrow morning) but judging from everyone else' reactions this should be good. Just a note though, I've been using the puree from my halloween pumpkins (un-carved, they just chilled outside) and the 15 ounce can of premade can be substituted for slightly less than 2 cups of homemade puree. This will just about top out a 9" deep dish pie plate.

Pumpkin Pie

I won't give this less than a three because everyone seems to like this but I can't see any reason why it made such a top of the list. I followed these directions to a T and had to cook this for almost two hours and it came out looking like a bad pumpkin custard.

REAL Homemade Pumpkin Pie

A sugar pumpkin, regardless of quality does not compensate for the complete lack of additional sugar. An additional 1/2 cup of brown sugar should suffice. Next time, include the yield on your 1 medium sugar pumpkin. Medium will vary between people and as spices are easy to overuse, especially in baking, a yield of 4 cups of puree and 6 cups of puree will make for incredibly large differences in taste.
