Slow Cooker Pot Roast

It was good, not excellent. The seasoning mixes made it rather salty, I would use 1/2 of each and more water next time. Cooking time is way too long, at least for my crock pot, it was cooked (and slightly overdone) after 1 hr high + 3 hrs low, wish I had checked it sooner. I will try again with less seasoning, more vegies, and shorter cooking time, then this really will be a great roast.

Oat Applesauce Muffins

Excellent basic recipe. They are very sweet, I may try another batch with less Brown Sugar. For added flavor, I added pinch of Salt, 1 tsp Cinnamon, 1/2 tsp Nutmeg, 1 tsp Vanilla, 1/2 C dried Cranberries.

A good, basic recipe where you can actually taste the individual ingredients instead of being smothered in a heavy sauce or processed food taste. Easy to customize with your own favorite ingredients.

2 min at 350 seemed perfect. Less time, and the m&m would not sink into the chocolate. Longer, and the chocolate dried out and cracked.

Chicken with Peas and Quinoa

Great recipe. Things I like about it: simple, quick, healthy. I used about 1/2 lb chicken as we are not big meat eaters, and it was plenty. Instead of jar of pasta sauce (which I don't like) I used one can Italian-seasoned diced tomatoes and one 8oz can tomato sauce and it was perfect. If you like Quinoa, try the Black Beans and Quinoa recipe on this site ... excellent.

Big Batch Kris Kringle Cookies

Do not care for nuts in baked goods so left those out and added about 1 C dark choc chips instead. Delicious. Temp seems too high though -- first 2 batches were very flat. Turned (gas oven) down to 350 and baked 10 min and they were perfect.

The Best Rolled Sugar Cookies

Absolutely the best sugar cookies ever. They really rise and are soft and cakey. Hold their shape very nicely. Don't know why others added more sugar, these have excellent taste and would be much TOO sweet with additional sugar plus frosting.

Frosty Pumpkin Pie

Quick and easy to make. Tasty pie. Does not need all the brown sugar, makes it much too sweet. I cut it back to 1/4 C and it was still delicious. May try none next time but not sure how much it contributes to that 'pumpkin pie taste' and may alter consistency.

Slow Cooker Italian Chicken Alfredo

This was good, my kids (4 and 6) both liked it. This is a ton of sauce, though. I don't like real 'saucy' dishes, so I would make this recipe for about 2 LBS of spaghetti next time. This time I dished it up separately, cooked spaghetti then dribbled with sauce. When we were done, I cooked up lots more spaghetti to combine with the sauce before storing leftovers. Changes I made to recipe: -Used only 2 chicken breasts -Removed chicken from cooking liquid and set aside, then mixed in soup/crm cheese for sauce. -Diced chicken and returned it to cooking sauce. -Added 1 cup green peas to sauce, next time will add more.

Lemon-Raspberry Muffins

Great taste in these muffins. Always trying to make recipes healthier, I substituted 1/2 C FF Sour Cream for the oil (sometimes I use FF plain or vanilla yogurt); used 1 C Whole Wheat flour and 1 C Whole Wheat Bread Flour; and reduced Sugar to 3/4 C. They are a little firmer on the outside due to no oil/butter, to be expected. And they are plenty sweet, will reduce sugar to 1/4-1/2 C next time. WW flours are my standard, made no changes to baking powder to compensate and they rose beautifully. I used frozen blueberries and will make with fresh from our bushes this summer. Yummy recipe.

Tomato Chicken Parmesan

Very good dish. I substituted two ingredients -- a can of Italian-recipe diced tomatoes and mozzarella cheese -- since I already had them. The chicken turned out tender and the combo with tomatoes and cheese was delicious. This would be a great company meal as it looks very nice too.
