White Sauce for Pasta

wow! I didn't know what to expect from this but it's very good. I did end up adding some garlic and garlic salt because we're huge into garlic. I also didn't use butter flavored granules because we don't have that. I also had to add a bit more flour but over all, fabulous! I could see it being used for SO much...and nice because my toddler can't eat tomatoes so we're constantly looking for new recipes that don't include tomatoes! I'm serving this over stuffed shells. YUM!

Kidney Beans and Corn

YUM YUM AND YUM!! I had my trepidations but this is EXCELLENT! I used frozen corn because I hate canned corn (1.5 cups) and didn't have green pepper. I was afraid of the cumin so I used about 3/4 Tablespoon but I'm thinking I could have put the full amount in. This is extremely flavorfull and the spices are not at ALL overwelming! What an excellent dish for a thrifty mama trying to clean out her cupboards! I will DEFINITELY make this again!! YUM!!

Creamy Beef Casserole

Very yummy! I made changes...I used 1 lb of ground turkey because I had a bunch of it. I also sauted the meat and onion with some garlic. I didn't have pimientos so I skipped that and I used half the sour cream. It was JUST as good! Oh, and I used crackers on top along with cheese.

Delicious Ham and Potato Soup

I doubled the recipe and added carrots, but other then that I pretty much stuck to the recipe. However, even though I only used 3.5 cups of milk (instead of 4 since I was doubling it) it was WAY too thin so I had to add a bunch more flour and even tried some heavy cream to thicken it up. I would still prefer that it be thicker but it's still very tasty. Next time, I think I'll use a little less milk and water and hope it works. However, it's extremely good. The reason I gave it 4 stars was because it was too thin.

Creamy Dilled Chicken Casserole

I used this as a base to make a chicken pot pie type dish. I used 3 chicken breasts, cut up into small peices and mixed that with the soup and milk. I also put in carrots, peas and celery and a big spoon full of lite sour cream to give it a bit of extra creaminess. I also put in some garlic salt and some salt and pepper to taste. NO green olives though-YUCK! Then I put it in a large cake sized pan and put 2 containers of biscuits over the entire thing. It turned out amazing!! Everyone who had it raved about how good it was!

Enchilada Casserole II

This was amazing!! I did it a bit different though...I only used 1 lb of hamburger, which worked out fine. I also used a can of black beans and some corn and I put a layer of tortillas on the bottom of the pan. I also used mozzarella cheese, because that's what I had. This was phenomenol! Everyone from my 14 month old daughter to my 48 year old mom liked it! :)

Big Batch Kris Kringle Cookies

These are quite good. I made a few minor changes, I used raisins because that's what I had and I used pecans and white chocolate chips because it was easier. They are a bit harder then I would have liked but still extremely good.

Peanut Butter Cup Cookies I

This was fabulous! I was glad to find one that didn't require mini muffin tins because I don't have any and would never use them again, so didn't want to buy any. I did use margarine instead of shortening though, I never cook with shortening. I also doubled the recipe. These are SO good and I will DEFINITELY make them again!!

Aunt Jewel's Chicken Dressing Casserole

This was really good! I accidentally opened up a can of cream of mushroom instead of cream of celery and that was really good! PLUS, it's low fat! I do weight watchers and am always looking for yummy, lower calorie recipes. I was very impressed with this!!
