Kidney Beans and Corn
YUM YUM AND YUM!! I had my trepidations but this is EXCELLENT! I used frozen corn because I hate canned corn (1.5 cups) and didn't have green pepper. I was afraid of the cumin so I used about 3/4 Tablespoon but I'm thinking I could have put the full amount in. This is extremely flavorfull and the spices are not at ALL overwelming! What an excellent dish for a thrifty mama trying to clean out her cupboards! I will DEFINITELY make this again!! YUM!!

Delicious Ham and Potato Soup
I doubled the recipe and added carrots, but other then that I pretty much stuck to the recipe. However, even though I only used 3.5 cups of milk (instead of 4 since I was doubling it) it was WAY too thin so I had to add a bunch more flour and even tried some heavy cream to thicken it up. I would still prefer that it be thicker but it's still very tasty. Next time, I think I'll use a little less milk and water and hope it works. However, it's extremely good. The reason I gave it 4 stars was because it was too thin.

Creamy Dilled Chicken Casserole
I used this as a base to make a chicken pot pie type dish. I used 3 chicken breasts, cut up into small peices and mixed that with the soup and milk. I also put in carrots, peas and celery and a big spoon full of lite sour cream to give it a bit of extra creaminess. I also put in some garlic salt and some salt and pepper to taste. NO green olives though-YUCK! Then I put it in a large cake sized pan and put 2 containers of biscuits over the entire thing. It turned out amazing!! Everyone who had it raved about how good it was!
