About this Cook
I'm a single mom with only one left at home, so cooking for the two of us is challenging. My boys love to get in the kitchen with me and cook and we have a great time.
My favorite things to cook
I love to cook mexican and grill. I am working on perfecting baking bread.
My favorite family cooking traditions
I make these really awesome mint cookies every Christmas. They are so good, like chewy little mint ores! We can't go through the season without them. We also have Mexican food for Christmas dinner every year. We like it much better than turkey again.
My cooking triumphs
I'm working on being able to make a good loaf of bread. I am really great at grilling too! I can grill just about anything. And cheesecake is my specialty dessert!
My cooking tragedies
Earthquake cake.....couldn't keep this one together with a whole bowl of icing. What a disaster for a birthday. Then the brownie ice cream cake that wouldn't cut after an hour out of the freezer. This was for my daughter's 8th birthday or so, and it was so bad!

Soft Christmas Cookies
This was so good with the 3 cups flour. I loved the taste. One trick I learned last year was to place the dough in a ziplock bag and roll it out to fill the bag. Then when you are ready, slit the bag along two sides and cut off a chunk to roll out. Didn't really need much more rolling and used powdered sugar so it would work back into the unused portion and not make it tough. Quick and easy cookies.

Potato Cheese Soup
This is a good soup with a little tweaking. I agree with other reviewers; will only use 1/4 cup butter/margarine next time. Will also make sure to cook the celery/onion mix thoroughly as it was a little crunchy for my taste. I did use mostly red potatoes and they hold up better. The one very large russet gave it that nice creamy potato consistency. Added crumbled bacon and green onion to the top. Will make this again. My grandson gave it two thumbs up.

Baked Ziti with Sausage
I made this for friends and it was a huge hit. I also cooked the onion and garlic with the sausage, added some red pepper flakes and some diced tomatoes. I think it would have been a bit bland without these additions. Will definitely make this again.
