Roasted Veggie Pasta

Reviewed: Feb. 18, 2010
If you love veggie's (esp. roasted), this is divine! Beautiful, tasty, healthy. I made enough to last for two more lunches, and I'm so glad. Of course I modified according to what I had on hand. Subbed crimini for portabella (divine!) Omited tomato Omited tapenade. Added a little sea salt and black pepper. Used bow tie pasta.

Shrimp and Asparagus

Reviewed: Mar. 14, 2011
didn't have mushrooms..still very, very good. One of my favorites. Make it EASIER: Just throw the shrimp in with the noodles during the last minute of cooking (and I use whole grain linguine). Use the bottled minced garlic if you aren't using mushrooms and then you avoid the saute step. This recipe only takes me about 10 minutes to throw together if my asparagus is washed and cut. I also like to just toss the asparagus w/olive oil and garlic salt and bake at 400 degrees till done. (Do this while the noodles cook) LOVE THIS.

VanVoorst Ham Casserole

Reviewed: Dec. 15, 2010
I had my doubts that the family would like this..they are quite picky. But it was a hit! My husband (who is especially picky) said to "keep the recipe". YAY!! I was a little skimpy on the mustard because of other reviews. It was very good. Next day I added a little milk to it before reheating and we all thought it was even better the next day. I used whole grain Rotini and a little bow tie pasta (regular, not whole grain) I had left in the cupboard.

Napa Cabbage Salad

Reviewed: Sep. 24, 2011
While very delicious just exactly as the recipe is written, I did find it too greasy for my tastes. I then tried the dressing with only 1/2 c extra virgin olive oil, and it was better and the taste did not change at all. I will definitely make again and keep experimenting with the amount of oil in the dressing.

Baked Sweet Potato Sticks

Reviewed: Feb. 19, 2011
I really like sweet potatoes anyway so I liked these of course. I did try adding a little garlic salt and that was yummy. However...they weren't at all crispy..very soft. I was hoping for crispy. I tried putting them under the broiler for a few minutes, which helped but they were getting cooked too much. No one else in my family likes sweet potatoes. Their take on this? No one liked them. Maybe if I could get them crispy. I will try them again to see if I can't perfect the cooking part.

Idaho Tacos

These are so very good!! But may I recommend adding a can of drained and rinsed kidney beans to the ground beef mixture, and adding chopped fresh tomatoes. We've even added sour cream. Oh my, so very , very good!

Taco Salad III

Reviewed: Sep. 24, 2011
All time family favorite! My family has enjoyed this salad for 30 years. The key here is to use CATALINA dressing. We always use the kraft LIGHT Catalina. Also, try with Nacho Cheese Doritos for the chips. this is so fabulous!

Shepherd's Pie IV

Reviewed: Jan. 27, 2012
Excellent! I mashed the cauliflower w/the potatoes (can't tell it's even there). I also added about a cup of sour cream to the cream of mushroom soup. I have three recipes for Shepherds Pie, and I think this is my favorite. My kids like it with corn better than with green beans. This is a versatile recipe.

Crazy Curly Broccoli Bake (Kid-Friendly)

Reviewed: Jan. 7, 2012
Used fresh broccoli (steamed first). didn't have cream of broccoli soup so I used cream of chicken. I stirred in some shredded cheddar. I tried it first with bread crumbs, and didn't like it, so I tried it with crushed saltines. Liked it that way. Tossed in some Parmesan like a previous reviewer suggested. It was a hit by all. This is a keeper. Could add chicken, ham, tuna... Very versatile.

Last Minute Chicken Dinner

Reviewed: Oct. 5, 2011
I didn't make this the "fast" way, I used fresh carrots and broccoli. But that was okay, because this was delicious. I about doubled this recipe for my big family and it was nearly gone when dinner was over. ***I've now made this recipe three times, each time my kids tell me "You should make this more often!". I've used frozen veggies and fresh, canned chicken, fresh chicken...all ways has been very good. My note: LOAD up the vegetables...I use more than the recipe calls for.

Quick and Easy Mexican Chicken

Very good. I added a can of drained/rinsed black beans with the cheese and salsa (gotta have beans!). Served it with brown rice. This is a keeper and very easy.

Soft, Moist and Gooey Cinnamon Buns

Reviewed: Nov. 5, 2010
I have tried many, many recipes for cinnamon rolls and this one is by far the best. I put mine on a jelly roll pan instead of a 9x13 so they could rise properly and not be squished. I like nice round rolls. I also did a cream cheese frosting. I am using these for a family get together and I am sure they will be a hit. Thank you! (followed recipe exactly..baked for 18 minutes. I'm high altitude and they worked great)

Autumn Apple Salad

Reviewed: Oct. 20, 2009
This is a really good salad..however, it is way too sweet! I only put 1/2 the sugar in it because it seemed like so much. It was still extremely sweet. Next time I won't add any sugar at all as all the other ingredients make it sweet enough.

Confetti Bean Salad

Reviewed: Jun. 24, 2012
This is a delicious recipe. I did not have red pepper on hand and it definitely needed some red color, so I diced up a couple of roma tomatoes. I added the juice of 2 limes. So good, refreshing and light!

Mountain Dew™ Cake

Reviewed: May 18, 2012
Yummy! VERY moist. I think next time I'll cut back on the oil a bit. I only added 1/2 cup sugar to the pineapple topping and it was PERFECT. 1 cup would have been way too sweet.

Rowing Team's Turkey Reuben Wraps

Reviewed: Mar. 31, 2012
these are really good, but I didn't think they worked well to make ahead. By the time lunch came around they were pretty soggy and drippy. But I did like the flavor and the crunch.

Angel Chicken Pasta

Reviewed: Mar. 20, 2012
Very good! the only thing I would change would be to use just water and not chicken broth (subbed for wine). It was on the edge of being too salty. I cut the butter in half. Next time I probably won't even use the butter.
