Grilled Salmon with Bacon and Corn Relish

Words from my husband: "Phenomenal!". Don't mess with this recipe. It is fantastic! My son is working in Alaska and sending home salmon and halibut by the boxful. I had a filet of halibut leftover from the day before, so i used this on King Salmon and Halibut. BOTH were delicious! This corn and bacon salsa is fantastic, even as a side dish.

Zucchini Patties

Desperate to use up the abundant supply of zucchini, we gave this a try. Followed recipe exactly. Yummy! We liked them best with sour cream and spicy salsa, or, even with ketchup. With ketchup you could've fooled me that they weren't potato patties.

My Own Mickmack

Really delicious. Economical, simple, ingredients on-hand. Used red kidney beans in place of the pinto, just because it's what I had. Tossed some shredded cheddar on top of half and let it melt before serving. We all liked it even better with the melted cheddar.

Cajun Chicken Pasta

Joy's Prizewinning Trifle

Made this recipe in a church Iron Chef Cook off. Won 5 stars for taste, appearance and best use of ingredient (which happened to be sour cream). Everyone (mostly teenagers) LOVED this! We made it with all the ingredients listed, the only thing different was we made the pudding first.

Sausage Casserole

This is really yummy. I made it with more potatoes - probably 4-6 cups and added the onions to them and baked for about 30 min first. I also added 2 more eggs just because I needed more to feed my family. It is a little bland. But we just sprinkled a little salt on each serving and that was great! I can see that you could do lots of variations with this: different cheeses, bacon, adding veggies (I'm thinking broccoli!).
