All I have to say is OMG!!!! This is an incredible way of cooking roasts!!!I was always hesitant to make a roast in the oven for fear of it being too dry. This method completely changed me. I used a 2.5 pound eye round roast and rubbed it with a seasoning packet I had from omaha steaks - it was dry bell peppers, dried garlic, salt, pepper, and sugar. After I turned the oven off, I was very skeptical and let the roast stay in for 2 hours. I checked it out and saw it was a tad bit too red for my household so I turned the oven back on at 400 degrees and cooked it for another 20 minutes. The roast came out pink and juicy. It was the best roast I ever made.
