Baked Ziti I

I cover it first and bake for about 30 minutes and then remove the foil and continue to bake until it's bubbling and golden (like lasagna recipes advise). A step I figured out only after I had my husband follow the baking directions for tonight's dinner while I was at an appointment and it turned out just passable but undercooked in my opinion. I've made it a few times and usually get compliments. Tonight I was feeding four teenage boys and it was not as popular as it has been in the past. I'm sure it was because it was undercooked. (How many teenage boys have you met who don't eat seconds?) Overall it's a good basic ziti recipe and a crowd pleaser. You can add what you like or make it meatless but just allow more time for baking it.

Ultimate Party Meatballs

World's Best Lasagna

This recipe needs no further recommendations given the high numbers and scores it has gotten but I found it so good I just had to add one more. Excellent recipe. I confess it was a little intimidating at first because of the description but it's really an easy recipe to put together. Everyone says lasagna is difficult to make but I find it's mostly time consuming. But I cooked the sauce while I was working around the house and put everything together later and baked it. I used hot Italian sausage and left out the fennel because I had none. I always add nutmeg to the ricotta cheese mixture. I used a 9x13 baking pan and found it just fit if I didn't layer the noodles too much. I overlapped 4 noodles and I used just a bit of sauce on the top to prevent the top layer from being too dry. My husband and dinner guests loved it. The sauce was perfect, nice and thick, having used jarred sauces in past I found them to be too soupy. Although lasagna is not my favorite Italian recipe this one is terrific This will be my standard Lasagna with meat sauce recipe from now on!! Will be great for larger gatherings too.

Raspberry and Almond Shortbread Thumbprints

Fantastic cookie. I've made these several times, twice for Christmas and once for a teacher/staff luncheon. I always make extras for my family. They are without a doubt one of the favorites and always get compliments from everyone. A must try recipe!!

Chicken Tikka Masala

Almost perfect!! This is terrific, my only suggestion is reduce the salt. I used only 2 teaspoons in the sauce but used the 2 in the marinade. It was still way too salty for me. It overwhlemed the dish and did not allow the other spices to star in the dish which is how I think it should be for inidan dishes. I think the recipe should read a lesser amount, say 1 in marinade and 1 in sauce and the add more to taste. I wish there were 1/2 stars to give then I wouldn't have deliberated over how many to choose. In the end I gave it a 5 star rating. Fairly easy to make too! I served it over basmati rice, my husband had been craving Tikka Masala and loved this.

Burmese Chicken Curry (Gaeng Gai Bama)

Excellent! I confess I was a bit dubious when I added the water to cook the chicken and realized there were few vegetables. I'm also not a fan of tomato based sauces, but this was terrific. The coconut milk mellowed the tomato puree nicely. I used a smaller about of red curry paste (I used the Thai Kitchen brand) because I was having a guest and wasn't sure if he liked spicy food. Turns out I needn't have worried. It was a mild savory dish that both my guest and husband raved about. Next time I will use more curry paste as I think the sutff I used had less pepper in them. For those who want to know I used Sun Brand Madras Curry powder if get from my gorcery store. I know curry mixes vary so if yours was too spicy then try a different curry. I am keeping this as a standard quick meal. It was easy quick and very delicious.

Cranberry Pistachio Biscotti

The first thing you may notice is that this recipes starts with olive oil. I thought it a bit odd, but these are fabulous. My husband wants me to keep them instead of giving some away for gifts. I didn't have light olive oil and used a really fruity extra virgin and they are fantastic. The tip about wetting your hands while forming the logs is a good hint. These will be found in my home a lot in the future. I am considering drizziling lightly with white chocolate for the next batch. You must try these!

Chuck's Favorite Mac and Cheese

This is excellent and super easy to make. I've made the tradional bechamel white sauce and added cheese ot toher recipes, but this one is even better. I made it for a Sunday afternoon football gathering and it got great reviews. Kids and adults enjoyed it. Even my picky eater son had second helpings! It was very moist, and the sharp chedder brings out the cheesy goodness. I buttered the baking dishes to make clean up easy. I will make this again! I did try to vary the recipes by adding some diced smoked turkey which was fine, but this recipe needs no alterations.
