Easy Meatloaf

I made it just as directed but adjusted it because I had 2 1/2 lbs of meat (oh and I used turkey) It made 2 loaves. Easy, good weeknight meal. My husband and I both enjoyed it. Will make great sandwiches and great leftovers. Too bad my 4 and 6 year old wouldn't eat it. Oh, well...will definitely make again.

Quinoa with Veggies

Very good, basic quinoa recipe. I used 2 1/4 cups water (one of those I used veg. broth) as the package recommends. Simmering for 20 minutes was perfect. I loved the idea of cooking the carrot in the water. It was soft after 10 minutes. I find stir frying the carrots they never get soft. I added chopped sugar snap peas, chopped red onion and everything else as the recipe called for. Very colorful, very tasty.

Eggplant Parmigiana Caponata

Very good...great for vegetarians out there. It really does use a lot of oil, though and I needed even more than called for to saturate the eggplant and saute the peppers. I also cut the brown sugar by half and used dried oregano. Anchovies and capers added a nice salty touch to the other very sweet elements. I served over penne. I would definitely make it again.

Marinated Greek Chicken Kabobs

I was honestly surprised how well these came out. Chicken cooked perfectly and was moist and delicious. Flavor was great. They were a big hit at our bbq. I'm reviewing this now as I prepare to make it for the 2nd time. Definitely a keeper.

Curried Citrus Quinoa with Raisins and Toasted Almonds

I doubled the recipe and made it just as is. It's really good. I"m sure when I go back in the morning after the flavors have mixed, it's going to be even better. I was lazy and didn't use fresh oj or fresh lemon juice, but it was just fine. Easy and great for a pot luck.

Sun-Dried Tomato Pesto

Excellent. Will definitely make again. left out the wine because I wanted my 4 year old to try it. So easy and so yummy. Served it over pasta and also with chicken. Next time will try with the wine. Wouldn't change a thing.

Stuffed Shells III

My first time stuffing shells and it was easy to prepare and a hit with our guests. I might add more sauce as it was a little light on the sauce by the time they finished cooking.

Honey-Ginger Grilled Salmon

We also liked it just the way it is. I loved that I didn't even need to dirty a dish and put all of the ingredients straight into the bag. Tasty and delish...even my picky 4 year old gave it a try! Will definitely make again.

Italian Sausage Jambalaya

I was pleasantly surprised how good this came out. I did everything by the recipe, but just approximated the sausage (whatever brand I had around), and added a little extra rice and a whole can of chicken broth. Because the okra was fresh, i cooked everything a little bit before i added the rice. I really think you can't mess this one up. Will definitely make again.

Sweet Corn Bread

This corn bread was perfect! I didn't have sour cream so I substituted lowfat plain yogurt and was great. Can't even imagaine how good it would be with sour cream!
