So much flavor!! I cooked Amish chicken strips in a pan, set aside, then made the buttery, mushroom and spinach sauce in the same pan to get some of the chicken flavor. I used frozen chopped spinach instead of canned, less butter and 2% milk instead of half and half. I put brown rice on the bottom of the pan, put the chicken on top and then topped with the creamy sauce. It cooked for 30 mins, the rice wasn't quite done so I added chicken broth and mozzarella and baked for another 15 mins. Next time I'll cook the rice before baking it. Very yummy!!
