After my first bite, I was not impressed. By the time I finished the cookie, I knew I wouldn't be able to stop at one. These were amazing! Even my boyfriend who doesn't generally like gingerbread couldn't get enough of them. My changes: I only had 1/2 cup of margarine, so I adjusted the recipe accordingly. I also made the balls smaller, so I still wound up with 24 cookies. I also used whole wheat flour, added a little brown sugar, and added a little nutmeg. The dough was a bit sticky, even after 15 minutes in the fridge, so I followed one reviewer's advice and sprayed my hands with oil. I was then able to handle it with no problem. These cookies came out perfectly and are a new favorite!
