Quick Chicken Piccata

Simple, easy, and tasty. All ingredients are standard household items except for the lemons, too. I used this as a nicer weekday dinner than other no-fuss meals. I did not have any capers and saw no reason to get them. It turned out I was out of cayenne pepper, so I used a zesty lemon seasoning I had instead. Since it contained salt and pepper, I omitted the salt and pepper as well. I only had a chicken pack of three, but kept the rest of the ingredients the same. Yummy, and a very nice treat for a quick and easy weekday meal. Many thanks for submitting this recipe.

Honey Glazed Ham

I found out I had no corn syrup when it came time to prep the ham, so I substituted a generous portion of brown sugar in its place. I just did it all in a saucepan instead of a double boiler, too. The ham turned out moist and flavorful. I did need to create a foil tent after about the first 40 minutes or so in order to not char the top of the ham. I also placed pineapple rings over the top adorned with cherries. Thanks for the recipe.

Garlic Chicken

My dad says this is now his new favorite! So easy to make, too. I used minced garlic from a jar instead, but about 6-8 Tbs. Then I decided to add more oil in case the ratio was way off. In other words, the recipe is flexible to suit your own taste. After letting the heated oil/garlic cool down a bit, I placed this in a plastic bag with the chicken to marinate overnight. Yummy and simple! Thank you for sharing this recipe.

Best Baked French Fries

So easy and so yummy! I just used Russets because that's what I had and the fries were still very tasty. This is a great way to make homemade fries. All the ingredients are staples that are always at hand which makes this recipe perfect for using up extra potatoes. Easy, fast, versatile, and I love that they're not deep-fried and greasy. Thank you so much! We'll be having this one again.

Sweet Potato Casserole II

Changed just a few things - I used two 29 oz. cans of yams instead of spending the time making my own. I used 3/4 cup of brown sugar instead of the 1 cup white sugar and I used pecan chips instead of the chopped. This was wonderful!!! Thank you so much for the recipe!

Jalapeno Popper Spread

OMG, This was wonderful and loved by all! I doubled the amount of jalapenos and i was perfect. Since I already had a large jar of them, I simply diced them myself and used the green chilies can to measure equal amounts of both. This was sooooo yummy with sliced baguettes. So easy, fast, and delish! I read the ingredients quickly before shopping and had to use the "green can" style parm, too, but it was still very good. I didn't measure it, but just generously covered the top - probably less than what the fresh parm called for. Thank you! We will be having this again very soon! Almost forgot - I always use Publix brand neufchatel instead of cream cheese as this brand tastes identical and is less fattening.

Garlic Red Potatoes

Wow! Super easy and super yummy! I used a large plastic baggie to coat the potatoes, but otherwise followed the directions. Thank you for this recipe. We will be having these again. Everybody loved them!

This was a wonderful, quick and easy meal! Thank you so much for posting this. I wound up using a lot more cheese than the recipe called for because that was the size package that I had to use up. My pasta bow was also more, but the sauce jar was less. In other words, this recipe is quite versatile and not dependent upon precise measurements. I kept mone in the oven for the full 20 minutes. It was enjoyed by all of us and was a warm welcome for a midweek meal. So easy, yet tasty!

Cajun Potato Soup

This soup was excellent and loved by all except my 12-year-old who simply does not care for anything creamy or spicy. I would have been very surprised if she did like it. I made a few changes that did not alter the basic recipe, though. One thing that I felt was important was the size of the sausage pieces. I halved them lengthwise before slicing them so they would be more bite-size. I'm glad that I did this. I also could not locate a fresh bunch of spinach other than an entire big bag, so I opted to try a box of frozen already chopped package. It was perfect and made the recipe even easier and less time consuming. I also used one more potato than the recipe called for and it could have used even more. Next time I'll add about three extra potatoes. Thank you so much for this wonderful recipe. It was so tasty despite the fact that the only spice used was the Italian seasoning. The andouille sausage provided all the spice that you would need. Yummy!

Cindy's Beef Tips

The meat was very tender, but the sauce was fairly bland. I used more meat than the recipe called for and there was still way too much sauce. The only thing that made this special was that I served it over spaetzle. Sorry, but I won't be making this again.

Garlic Mashed Potatoes Secret Recipe

I scaled this down to 10 servings and they were enjoyed by everybody. I also used minced garlic since this is what I keep on hand. I still prefer my recipe which uses cream cheese and sour cream, but these were yummy and easy to make. Thank you for submitting this recipe.

Chicken Asparagus Roll-Ups

My dad said this was one of his favorites, but I would have given this a four and a half if possible. My two daughters felt the same as me. I guess after reading the comparison to Hollandaise sauce, I was a little disappointed that the sauce got lost in this a bit. I even put some on the chicken before adding the cheese and asparagus. The lemon flavor was powerful, but that was fine. This would have truly been wonderful with Hollandaise drizzled over the top of it before serving. I also used 5 asparagus spears for each breast and I'm glad that I did. Other than that, I followed the recipe exactly. I will be making this again, but I will probably reserve some of the sauce to drizzle over the tops of the breasts as there was plenty. Thank you for this recipe.

Rempel Family Meatloaf

Sorry, but without a topping, this meatloaf is just ordinary and nothing special. Others have made their own toppings and given 5 star ratings, but since the original recipe has none, I could only give this two stars.

Spinach, Caramelized Onion, and Muenster Au Gratin Potatoes

I was torn between four or five stars. I opted to go with four because I believe a different cheese would have been better and alot cheaper, too. I couldn't get shredded muenster, so I had to buy a 1.11 pound block which worked fine for the two cups. The block cost $8.09 which is too pricey for the results. The cooking directions and times were right on the mark, though, and my dad just loved them. I love the idea, so I will try a different cheese next time because the Muenster was just too mild. Thank you for the recipe.
