Fantastic shell recipe, the marsala gives it an incredible flavor. We went ahead and rolled out the dough, and even with a LOT of rolling, it really isn't possible to get it perfect without a pasta machine, but it still came out really good. My only complaint is that the filling recipe neglects one very important step: drain the ricotta first! If you just follow this recipe, the filling can be very wet and it doesn't stay inside the shells, you need to strain the ricotta first to remove some liquid.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo
I was so heartbroken over this recipe. I saw honey-cumin cilantro and chipotle mayo and I was in love with the idea of what this could have been. The chipotle mayo was OK, but I did not care for the slaw at all. The fish was amazing, and I hoped when I put everything together into the tortilla the flavors would all mix and it would be incredible, but the mayo was just spicy and the coleslaw was an odd texture. And I love coleslaw normally. I eventually ended up eating the fish by itself because that was as good as I'd hoped. Definitely not making this ever again.

Sweet Potato Minestrone
Absolutely incredible. I'd have never thought to use sweet potatoes in a soup like this, but now I don't think i can cook them any other way. My only suggestion is that you keep the garlic powder and salt/pepper on hand throughout, as it started off a little bland and i found myself adding more seasoning every time i stirred it.
