Pecan Pie V

I absolutely suck at baking but wanted to try to my this to impress my future in laws on Thanksgiving. It turned out absolutely perfect, I followed the directions just as they are. I did get worried because it was still a bit liquefied after baking but my mother in law assured me it was suppose to be that way and would firm up. It did and everyone loved it so much they want it for Christmas too, only I need to make 2 pies this time!

Creamy Coleslaw

My DH and 8 yr old DD loved this. I should have combined the mayo, sour cream, mustard and vinegar together first before adding it to the rest of the ingredients. Otherwise YUMMMM

Becki's Oven Barbecue Chicken

I use diced chicken breast and otherwise follow the recipe to the T. I love how the sauce bakes into the meat, it is nice to shred the meat up a bit so every part is saturated, so good my daughter and fiance lick their plates clean. Plus easy to make!!

We use our store's brand of frozen fruit and therefore do not need ice. We also use soy milk in this recipe, otherwise it is followed to the letter and delicious.

Peanut Butter Easter Eggs

I really enjoyed these and so did the family. The only thing I would do different is make them smaller. I followed another reviewers idea to use the plastic eggs as a mold. Well it was just too much peanut butter mix per chocolate. Bit overwhelming. Next time I will see if I cannot find a Easter themed candy mold that would produce smaller pieces then cover in chocolate.

Basic Chicken Salad

Served it on AR's Homemade Flour Tortillas recipe with some lettuce and sliced tomatoes. I cooked the chicken in a slow cooker for a couple hours in the morning with some fresh garlic, onion powder and parsley. When it was done I shredded it. Also added pickles. My family thought it was a very gourmet lunch :) that would be served at an expensive restaurant.

Feta Eggs

The "idea" sounded good but at the same time not right. I was wrong, even my picky 7 year old liked them. It said to salt and pepper to taste, well we like garlic on almost everything so we used garlic salt. To avoid soggy eggs, when you do the tomato make sure you get the seeds out. This one is a recipe keeper thanks so much for taking boring scrambled eggs and zesting them up in a new way.

Chocolate Covered Strawberries

I made these today. I did not have a double boiler, fondue pot or any such thing. I took my big soup pot and filled it a few inches deep with water, took my smaller soup pot and put it inside with the ingredients. The chocolate and shortening melted fast and did not burn, was nice and smooth. I grabbed a hold of the strawberry leaves, dipped away and placed them on wax paper. Within a couple hours they were set. Some of them while they were still hot I sprinkled coconut on them, that was good and pretty. I used store brand semi sweet mini chocolate chips in a 12 oz bag. Will make these again since I have leftover chocolate, or maybe use it for pretzels.

Grilled Rock Lobster Tails

Oh my this was AMAZING. No need for butter to dip it in, it had so much good flavor. We have never cooked lobster before, I cannot even tell you what kind of tails they were, just smallish ones from the local market on sale. I marinated the lobster tails in the marinade on their belly for a hour before we put them on the grill. I also realized after we cooked them that I needed to cut the underbelly down the middle and had forgotten to do that. Maybe that helped seal in the juices because as it was on the grill we kept spooning the marinade over it which caused the flames to lick the sides of the tails, SOOO good. We grabbed the scissors after and cut their bellies (easiest way for this and crab legs which we also had) the meat was opaque and perfect. You have to try lobster this way, trust me you will never want to eat at Red Lobster again, not when your food can come out this good and cheaper.

Homemade Flour Tortillas

My family thought these were good. When I asked them if we should use these again or go back to store bought shells it was a unanimous vote for these. I just could not make them with lard, vegetable shortening was bad enough. I do not have a rolling pin yet, so I rolled them out with a plastic cup, surprisingly my resourcefulness worked. They are somewhat pita like, but we liked that (probably because I couldn't get them thin enough, or the lack of lard). Oh and I used hot water like others suggested. Recipe for me yielded about 15 shells a bit bigger than my hand.

Hamburger Steak with Onions and Gravy

This was excellent, a very nice comfort food. Instead of garlic powder I used fresh garlic 2 cloves. I also threw in a portobello mushroom and some green peppers into the gravy, so good. For the gravy I used a powder mix from Sam's club and made four cups worth cause our family loves a lot of gravy. Made it in the pan the burgers had cooked in. Served it over Basmati rice made with chicken stock.

French Fried Potatoes

These are easy to make and do turn out firm. I do wish I had a fry daddy so I could set a temperature, as for now I have to test one fry then adjust the heat till one comes out right.

Pepperoni Burgers

So SOOO good! I have left out the pepperoni when we have been out and it is not the same, love the pepperoni in it. Family favorite especially with the kiddo. Also make fries from a recipe in my favs on here.

Campbell's Kitchen Beef Stir-Fry

This was very good. We used pork shoulder instead of beef. I did add a bit of wasabi horseradish as I was cooking the meat to add a bit of flavor and heat.
