Pasta with Fresh Tomato Sauce

Loved this recipe! This is perfect for using the tomatoes and basil from the garden. I used about 8 tomatoes and a fistful of basil. I was a little too careful with adding the raw onion, now I wish I had added more because it was just SO good. I added Garlic Powder and salt and pepper (the dressing I used didn't have much sodium). The meal was ready in no time. I highly recommend.

Pizzelles II

Absolutely love this recipe! The pizzelli come out nice and crisp. Only substitution I made was to replace anise with vanilla extract. I also sifted the flour. I use two different types of pizzelli irons and to make sure the pizzelles come out thin and crispy, I apply the batter then shut and hold the iron closed for 10 seconds.

Healthier Boilermaker Tailgate Chili

Loved this recipe and may be my new go-to! I substituted all meat with pulled chicken, used a combo of black beans, pinto beans and chickpeas (since that's what I had on-hand) added a small can of corn and used a lot of sriracha to replace anything spicy. Super tasty! Gave four stars since I didn't follow recipe exactly.

Espresso Biscotti

Perfection! I always get rave reviews when I make these biscotti. They are very easy to make, and the dough isn't as sticky as some other biscotti recipes I've tried -- makes it easier to knead the dough. The only tweaks I make is to double up on the espresso, skip the dried apricots and add a 1/4 cup more of each of the chocolate, almonds and cranberries (personal preference). When forming the logs, I like to angle the top and bottom edges of the dough so that when you cut them diagonally, you don't waste too much of the cookie. After it is twice baked and cooled, I like to dip some of the cookies in ganache chocolate (See Chocolate Ganache Recipe).

Vegetarian Kale Soup

This is a great recipe, I make it about twice a month. My two tweaks: 1. Cut down on the veggie bouillon by 2 cubes, you don't even miss it. 2. More kale and less potatoes. I prefer hardier soups.

Roasted Brussels Sprouts

Chocolate Ganache

I didn't follow the directions entirely, which is why it became a kitchen fixer-upper, but in the end it worked out. I figured I would share my experience. In the event that you buy the POWDERED bittersweet cocoa because it is more economical on the wallet, just remember powder doesn't melt like bar chocolate. But do not fear, all is not lost! Just add 2 cups of heavy cream, a small can of sweetened condensed milk (really helps to sweeten it up), and a few splashes of low-fat milk (whatever you have on hand) and stir it up with a spoon over low heat until the heaping glob of chocolate thins out. The benefit is the chocolate will harden and has a glossy look to it, so it makes it ideal for chocolate dipped cookies. It works out well when you get past the initial panic.

Grilled Portobello Mushrooms

Great recipe and SO tasty. The first time I followed the recipe but felt like their wasn't enough vinegar. This time I only had 20 minutes to let it marinade, but that was more than enough. I didn't have any fresh garlic so I used garlic salt and dried basil. I also just used a frying pan and I came out great, it kept the flavor and the juices. Will be making this again and again.

Excellent! This was so tasty. The only tweaks I made was to brown the meatballs before putting it into the broth and I used Orzo instead of Seashell pasta.
