Mediterranean Breakfast Quinoa

Reviewed: Oct. 24, 2011
This was SOOO delicious. I used sweetened coconut milk instead of cow milk and honey. Didn't have apricots so used dates and raisins. The results were fabulous! Nice to find a dish that doesn't need wheat, gluten or dairy to be awesome!

Apple Crisp IV

Reviewed: Nov. 1, 2010
Yum, everyone I have served this to loves it :) Classic simple and delicious. I made the recipe as-is the first time, but the second time I melted the butter first and then added it to the mix. I also used whole wheat flour (you can't tell at all) and added 1/2 tsp salt. PERFECT! I think this is my new standard crisp recipe.

Chicken Potpie

Reviewed: Sep. 15, 2010
This is wonderful comfort food! I followed the recipe exactly and made my own pastry (the one on the tenderflake package) and it turned out absolutely delicious... an awesome standard recipe.

Trail Mix Cookies

Reviewed: Jul. 9, 2010
Awesome healthy cookies! These are definitely a perfect base for an "everything" cookie. These are the changes I made - partly out of necessity and partly because I am health-conscious! - I used unsweetened applesauce - Heaping 1/2 cup brown sugar only (omitted white). - 1 whole egg and 1/2 of a banana mashed - handful of sesame seeds - 1/4 cup walnuts and 1/4 sunflower seeds - 1/2 cup white and milk chocolate chips (no craisins or raisins on hand). - whole wheat flour Because I improvised a bit, I ended up having an overly sticky dough at the end so added an extra 1/4 cup of flour. I made the cookies quite large (1 1/2 dozen) and so baked them for 10 minutes. Perfect! The result is a very yummy and pretty healthy cookie - one I don't feel bad about allowing my two year old to have. Next time, I may cut the brown sugar back again to just 1/2 cup... and keep the rest of my changes :)

Pumpkin Wheat Honey Muffins

Reviewed: Jun. 9, 2010
These muffins are delicious - 5 stars with the following revisions: I followed other reviewers suggestions: 1/2 cup apple sauce and 1/2 cup light tasting olive oil/1 tsp cinnamon, 1 tsp ginger and 1/2 tsp cloves and nutmeg instead of the pumpkin spice/1 cup pumpkin puree instead of 3/4 cup. I was short one egg, so I added an extra 1/4 cup applesauce. I replaced the nuts and raisins with 1/2 cup (soaked) dried cranberries. I cut the brown sugar in half as well as cutting the honey down a bit. They are still plenty sweet! Next time, I think I will cut the sugar down even more.

Sweet Dinner Rolls

Reviewed: Oct. 6, 2009
These are BY FAR the best dinner rolls I have ever made. I don't have a breadmaker, so I made them according to the suggestions of other reviewers... and I even had to rush the proofing and rising time (proof time 10 mins, first rise 45 mins and second only 1/2 hour) and they STILL turned out great! My husband is already bugging me to make them again (and I just made them yesterday).
