Chicken Lo Mein with Broccoli

This is indeed a very adaptable recipe. I followed other reviewers' advice and did not use the water, and cut down the chicken broth to one cup. I also added a little of almost every Asian sauce, including hoisin and oyster, and I simmered it somewhere between five to ten minutes. The result was pretty thick, with enough sauce that I made extra noodles to mix in. But it tasted pretty good! It's a good recipe in that you can use whatever vegetables you like and change the sauce up too, depending on what consistency you prefer.

Spaghetti Squash I

I think this is a really good foundational recipe -- I'm sure there's a bunch of ways you could shake this up. It was my first time trying spaghetti squash, and first I absolutely second the person who said you should pour a cup and a half of water into the pan before cooking the squash -- that's how it cooks in half an hour. Concerning the texture of spaghetti squash, for those new to it: someone said it was crunchy, and that's not quite right. Nor is it tough, but it's missing the chewiness of pasta-spaghetti.

Coconut Rice

This is really tasty, but I recommend using 1/4 coconut milk, 3/4 water - the milk is really thick. Tasty with raisins when you finish!

Bread Pudding I

Mine not have cooked long enough (it baked for over an hour, but my oven's slow), but it still came out very tasty, though of a weird consistency (like gelatin). I incorporated reviewers' suggestions, like more cinnamon.

Zucchini and Rice Casserole

Pretty tasty. You can definitely cut down on the amount of butter and oil, though - after I cleaned my plate (which I did quite happily) you can see the amount of oil leftover. Also, I accidentally used a type of instant rice which never browned when I sauteed it, but it all still came out well.

Utterly delicious! I did a tablespoon of cinnamon like others suggested. It seemed like not much water for a lot of apples, so I added a bit more, but then it was boiling a lot as it cooked, so I'd stick with 3/4. It does cook down, after all.

Tomato Chicken Parmesan

It is pretty good, though the breading didn't work for me at all, just stuck to the bottom of the skillet. Nevertheless, it was good. I used provolone instead of Monterey Jack cheese. You may want to add more spices into the breading mixture (if you can get it to stick) for more flavor.
