Becky's Easy Cilantro Lime Rice

Very tasty! The puree smells so good and fresh. I accidentally added 7 ounces of green chilis instead of what was recomended so it turned out very spicy, but I liked it that way. Would definitely make again!

Amsterdam Hippie Soymilk Chai

So delicious! Expensive to make but so worth it! Love the name and the story behind it too. Next time I think I will try vanilla soymilk to make it a little sweeter, but Blue Agave sweetener worked very well too.

Pasta with Spinach Pesto Sauce

This was too much work for something that didn't have much taste. It had a lot of really good ingredients in it but they just didn't come together. I wouldn't make this again.

Enchilada Casserole III

I loved this recipe but my picky hubby just liked it. I used ground turkey instead of ground beef and added onions and green chili peppers to the meat. The only thing is my enchilada sauce came out too thick I think? Maybe I didn't add enough water? Overall it was very tasty and easy.
