Spiced Coconut Coffee

had to make a few changes, but enjoyed it anyway. Will try it the original way, next time. Instead of crushed red pepper, I used Cayenne pepper. I didn't have a cinnomon stick so i added about 1/2 tsp of ground cinnomon. I think it was a little on the weak side (for cinnomon). I wondered about the 2 whole cloves, but went with it anyway. I didn't find them to overpower the flavor. Infact, there is a spice flavor, but it isn't overwhelming at all. I bearly noticed the pepper (only because I knew to look for it), my husband didn't notice it at all. This is a fun drink I would consider doing again! though I want to do it with whip and cinn on top next time.

Sunday Morning Lemon Poppy Seed Pancakes

these were good. at least i liked them and my 11 month daughter liked them. My husband, who hates anything with Lemon in them, actually ate several of these. He says they are decent and he will eat them if i insist on serving them, but he wouldnt request them. (we will make them every now and then when i want my lemon fix). i didnt use poppy seeds. but only because i didnt have any. i look forward to trying them with the seeds next time.

Frozen Bananas

yummy. i had this for the first time several summers ago. I watched a group of kids munch these down with speed. when I tried one myself. ohh did i enjoy it!!!! LOVE THEM. also taste good drizzled in honey and rolled in cereal.

Elephant Ears

loved them! i was craving elephant ears like you wouldnt believe. it was good to find this recipe. at first i rolled out the ears really really thin because it said to do it thin. these were good, but crape like. i tried rolling them out to different thicknesses and found i liked them best at maybe a little less then 1/4 inch. this made them puff up a bit more. liked it both ways.

Caramel Pie

this is deadly! i ate one very small sliver of this pie and my hands are still trembling. its good, but i wouldnt consider 2 cans.. the amount of sugar in this with just ONE can is enough. Im thinking i might use it as a layer for a cheesecake or brownies.. it should be eatten with something. The whipped topping is important. it cuts the overload of sweet down and makes it eatable. excuse me while i go try and burn the sugar rush off. wondering if i should have a second piece..

Extra-Easy Spinach Lasagna

loved this. dont make lasagna often because of the time. this was simple enough and taste was good. I used cottage cheese instead of ricotta... it was a little cheaper. added broccoli, onion and carrots with the spinach. next time will double other filling ingredients. Even my 8 month old daughter loved it.

Baked Salmon II

we enjoyed this recipe. I did end up doubling the garlic and didnt noticed. Also used dry parsley instead of fresh. the flavor was herbal with a touch of lemon.. we found it mild and complementary to the salmon. we served with brown rice and Brussels sprouts mixed with turkey bacon. Also a spinach side salad. very very good!!! a keeper.

Jamaican Plantain Tarts

in all honesty i think they tasted a bit like they should have. my husband didnt like them at all, he thought they were bland. im going to us this again but not booil the plantain, i will fry it instead, seems that keeps the sweetness about it.

Cream Cheese Pumpkin Muffins

didn't like these too much when they were still warm. taste much better when they have had a bit to cool. filling isn't gooey, its more pastry like. i found the flavor mild but good. am trying to think of a way to make it more gooey (as that was what i was wanting). didnt use baking soda, used baking powder but that was only because i didnt have soda. will use soda next time. ANOTHER DAY: My husband asked for these. Second time I made these was a charm. able to use Soda like recipe calls for. they turned out great. added cream cheese frosting to the top. Yum.

Orange Muffins

followed recipe exactly (which is something i don't often do) My daughter enjoyed these, and i mostly did. My husband took one bite and handed it back with a firm 'no thank you'. I didn't care for the orange zest in it to much, i think i would have liked it better with just the OJ. Other then the zest.. i found there mild orange flavor to be great. 400 degrees was a bit to hot. i took them out 4 minutes early and the bottoms were still a bit.. to well done. ate them with a cream cheese frosting.. this worked great!

Avocado Pie

Rating this a 4 simply because I'm willing to try it again. Overall, i don't think i was sold on how it came out the first time. 2 year olds opinion: "banana??" she liked it Husband: "Less lemon more condensed milk please?" he wasn't a huge fan 8 month old: "Mmmm." she wanted more..but to much dairy to give her more. ME: it was ok. willing to make a second and third time. I would like to try it with less lemon and more condenced milk (for my husband). I would also like to use the otherall idea and see about making a nonebake keylime/avocado cheesecake out of it. The pie itself tasted ALOT like a keylime pie, but with hints of avocado. I used a chocolate gram crust because a reg one wasn't available at the store. doesn't store for long periods well. should be eaten right away. ohh.. it doesn't specify what kind of avocado works best. I used 1 of the large ones. i believe it was a 'west indies' type. I chose this type of avocado based on its smooth sweet taste. Hass tend to have a little bit more bitter and less sweetness to them (though I like them much better). I assumed the recipe meant 2 of the smaller Hass avocado? but i'm not sure. I would like to try it with a few Hass and see if i like the pie better this way.

ate these as they came out of the oven and had very few left when we were finished cooking. no clove in it as I dont have any ground clove, and i used light syrup instead of dark. still very good.

Perfect Pumpkin Pie

not the best i've ever had. missed the recipe i used last year. texture was off a bit and it was to mild, even with extra seasoning, not enough pumpkin flavor.

Cornish Game Hens with Garlic and Rosemary

fixed for dinner last night. looked beautiful. very moist, my husband loved it. the garlic wasn't even a little overwhelming. i stuck the juices and garlic in the blender and blended then warmed to sauce. it was very yummy.

Best Greek Stuffed Turkey

I made this stuffing part of this Turkey for Christmas 2010. It was my first Christmas married. We used Jerk Seasoning on the outside (on request of my husband.) and used this stuffing on the inside. I couldn't find Ground lamb for the life of me so we used ground beef instead. I'm didnt rate it when I made it because of the two changes were a bit drastic. However, its 10 months later, and out of nowhere my husband requested the same turkey this year for thanksgiving. He looked hopeful and very excited. He enjoyed it enough to suggest we bring it to the 'big family event' to share with others. so it was "Out of the blue remember and still love' good. I am not a stuffing fan. Infact, usually i avoid it at all costs. I enjoyed this stuffing very much. And also look forward to trying it again. looks like we have one of our first family traditions beginning with this recipe. Thank you.
