Frozen Bananas

yummy. i had this for the first time several summers ago. I watched a group of kids munch these down with speed. when I tried one myself. ohh did i enjoy it!!!! LOVE THEM. also taste good drizzled in honey and rolled in cereal.

Elephant Ears

loved them! i was craving elephant ears like you wouldnt believe. it was good to find this recipe. at first i rolled out the ears really really thin because it said to do it thin. these were good, but crape like. i tried rolling them out to different thicknesses and found i liked them best at maybe a little less then 1/4 inch. this made them puff up a bit more. liked it both ways.

Homesteader Cornbread

liked this alot. followed suggestion of switching measurements of flour and corn meal. also mixed a good long time. was concerned with the batter being so... batter like, yet the cornbread turned out wonderfully.

Jalapeno Popper Spread

i tried very hard to follow this recipe completely, but was unable to. Sadly my local grocery store doesn't have canned chili peppers. Grrr. I used a little more of the jalapenos (jarred not canned.. same reason) and cut up a fresh pepper of an unknown name. i know it to be extra spicy so i took out most of the seeds. because of the changes i couldn't help (and the fact that i took out most of the seeds of the one item that was hot), the dip was way to mild. i ended up adding a shake of a chili sauce. little shake, not much. despite all the changes i couldn't prevent.. the dip was very well liked. it had the yumminess of the jalapeno peppers without being overpowering for those who don't like spice. sadly, I didn't get to take any home. next time i will make some to keep at home too!

Extra-Easy Spinach Lasagna

loved this. dont make lasagna often because of the time. this was simple enough and taste was good. I used cottage cheese instead of ricotta... it was a little cheaper. added broccoli, onion and carrots with the spinach. next time will double other filling ingredients. Even my 8 month old daughter loved it.

Jamaican Plantain Tarts

in all honesty i think they tasted a bit like they should have. my husband didnt like them at all, he thought they were bland. im going to us this again but not booil the plantain, i will fry it instead, seems that keeps the sweetness about it.

Soft Sugar Cookies V

notmy favorite sugar cookie. a: dont like the wait. b: i like soft but these taste like cake and i dont care for cake. c: its a roll out cookie that melts fast gets a bit to sticky. didnt even finish making them, i made only one tray. instead of being a joy to make they are now a chore i need to get around to finishing.

Dutch Apple Pie with Oatmeal Streusel

enjoy the taste.. the topping turned out.. interesting. flavor and texture wonderful, but all that butter melted into the pie.. when i cut into the pie it was a little runny. most of the butter pooled into the place the slice use to be. very buttery taste.. i like.. but i think i might need to relook at the topping and try that again.

Banana Banana Bread

First admission: I've never used this as a banana recipe. I had wanted to try and use plantain and make a plantain bread. This is the recipe i chose for my plantain bread. because I used plantain instead of bananas there were a few minor changes i made after the first time i made it. I now use 4 plantains, and increased the sugar to about 1 1/2 c. it turned out amazingly, my husband asks for this often. Thank you shelley for the bases of a new family favorite.

No Bake Pumpkin Pie I

have baked pumpkin pies before, and liked what i've made. I've never tried a no bake pumpkin though. and never ever cooked with gelatin. sadly, the lack of experience with gelatin bit me. i dont think it set well enough and my pie turned out a bit.. runny/sticky-ish. the flavor is good, the consistency not. tastes really good frozen and with icecream. yum

Apple Pie I

simple, which i like. One of my first attempts at apple pie. The flavor was very good, however a bit runny if eating hot. Thickens when cooled. Friend suggested i coat the apples with flour before baking. will make this one again
