Spinach Brownies

I liked this but I changed it a little bit and I think I will change it a little more the next time I make it. I used 1/2 cup flour instead of a cup but still found it a little bready -- I wanted more of the taste of spinach and cheese. Next time, I will probably increase the amount of cheese. It may not hold together as well but I think it will have more spinach flavor.

Baked Sweet Potatoes

I cut the potatoes a bit smaller and substituted rosemary for the oregano and these came out PERFECT. Great side dish on a cold day!

Pork Chop Soup

This was FABULOUS! I made some slight variations but didn't change too much: I thought it would make a better stew than a soup, so I only used 1 - 1/2 cups of chicken broth rather than 3 cups. Also, I used bok choy instead of broccoli. I love broccoli but it has such a strong flavor on its own and I thought this recipe could use something more subtle.

Crumb-Coated Chicken Thighs

This recipe was perfect as is and also lends itself well to slight modification. Made it a second time with less curry and a bit of cayenne pepper. Gave it a little heat but still had the same basic flavor. To me, the mark of a great recipe is that is has ingredients that most of us already have on hand. This was really terrific! Gotta say though, reading some of the other reviews is interesting: If you fry instead of bake and use different spices, then ... um, you're not making THIS recipe. You're making something else; why not post your own version?

This is a great recipe. I took away one star for the white sugar. I don't et that -- there's absolutely no reason for there to be sugar in this recipe as far as I can see.

Apple Crisp III

Loved this! Just made a few very slight modifications: I used half brown sugar/half white sugar; I used a little more flour when I made it the second time because the top didn't crisp up enough the first time; I also added a pinch of salt to the apples. I think a little salt brings out the flavor in any kind of baked apple dessert. It was slightly soupy, perhaps because I used Gala apples? Not sure, but next time I might use 1/4 cup water instead of 1/2. For the most part, though, I LOVED this.

Easy Italian Chicken II

Excellent recipe, especially for beginner cooks! Tip: check your chicken at 45 minutes. The recipe suggests an hour but if your chicken breasts aren't huge, an hour is too long and your chicken will be flavorful but dry as dust. For the most part, 45-50 minutes will get 'er done.

Easy Chicken Curry

Great recipe except as stated, it is desperately in need of more liquid. I add a cup of chicken broth after adding the chicken and simmer for about a half hour and then I add a half cup of milk or cream to thicken the gravy up a little. If necessary, I add a pinch more curry after I stir in the cream or milk and then let it simmer for another 15 minutes or so. I also prefer to use thighs and legs rather than chicken breasts for a heartier meal.

Simple Beef Pot Roast

Made it almost exactly as written (I left out the celery because I don't care that much for it, and you can't buy ONE stalk. What would I do with the rest of it?) (^_^) This is almost perfect EXCEPT the recipe cries out for just a bit of liquid. The beef was tender and the vegetables were VERY flavorful! But the veggies stuck to the pan and even though the meat was tender, I thought it would have been nice to have a little gravy or sauce with it. This recipe is *almost* perfect; will make it again but add a cup of beef broth to the mix.

Roast Chicken and Vegetables

Nearly 2 hours for a 4.5 lb chicken? Depending on your oven that might be a bit long. I'd check it at 1 hour,20 minutes. Other than that, this is a great recipe.

Sweet Potato Pie II

Pretty good! I don't care much for pumpkin pie but I've always loved sweet potato pie. I modified this recipe ever so slightly but still had a great result. I don't bother to separate the eggs. I just put everything together in the bowl and stir it up until smooth, which can be done by hand. I used whole milk, not evaporated and I baked at 350 degrees for about 55 minutes. I happened to have some pecans around so I decorated the top in a circular pattern just before putting the pie in the oven. YUM!
