Salmon Patties II

The ingredients look too simple but it works and makes great slightly puffed very crisp salmon patties. My husband won't eat them any other way now.

Favorite Old Fashioned Gingerbread

Have to double spices, I used half molasses half raw honey. Turned out beautifully as three mini loaves, took about 45 minutes to bake. perfect with hard sauce. Our guests were thrilled to eat a couple of slices and then take a mini loaf home. Batter seems runny but bakes up nicely.

Slow Cooker Tapioca Pudding

listen to the reviews! don't make this if you aren't home for the day. Made in my crockpot on low because I know it runs really hot, had to be stirred at least once an hour, absolutely requires pearl tapioca not minute, used half and half instead of milk, added a tablespoon of vanilla and half teaspoon sea salt. Mixed eggs really well, then added other ingredients, then poured into sprayed crock. Nicely creamy and rich. Will switch to large pearl next time, the small pearl really seem to cook down too finely for my taste. If you have ever tried KozyShack tapioca pudding that is large pearl just for comparison. Delicious and by far the easiest foolproof way to make tapioca pudding I have tried in three decades.

Not Your Mother's Pumpkin Bread

Made this using pumpkin pie spice and extra mace and ginger. Also used half T each baking soda and aluminum free baking powder, got immense lift. Used 2 cups chopped toasted walnuts (we love nuts) would be good with pecans or toasted pumpkin seeds too. Soaked 1/2c craisins in the sherry warmed in microwave for one minute to help absorb. Used half butter half oil, little shy on the oil. Went half cup less on each sugar measurement. Add the eggs to the creamed mixture before adding pumpkin as with all baked goods. Baked 6 mini loaves (40min) and one dozen mini bundt (30 min). Perfectly baked, no goopiness. I have never had good success baking full size loaves with most quick breads, so I don't! Would have made 10 mini loaves without the bundts. I filled everything using a 1/4c/2oz disher (average icecream scoop) and one was perfect for the muffin size, three heaping each was more than enough per loaf. Mixed warm softened 8oz creamcheese with 3T real maple syrup for a drizzle to serve. Not too sweet and very delicious. Heading out to take mini loaves to homebound elderly neighbors. Yay autumn!
