Beef and Irish Stout Stew

This got rave reviews from my friends. I work in a bar, so I was lucky enough to have Guinness right from the keg. I served it with champ as others suggested & with a toasted baguette (no time for irish soda bread).

Crispy Barbequed Tofu Slices

These were so good! I unfortunately only had cubed tofu but was determined to make these. I baked the cubes for about 20 mins based on other reviews & added honey to the BBQ. They were a great texture, but I didn't see a need for the BBQ sauce in the egg mixture. After frying them, I tried one & it had no flavor. So I threw them all into the remaining BBQ & honey mixture & they came out great! They became a bit hard as they cooled, but I'm blaming that on the cubes. I plan to make this again this week with regular tofu! Thank you :)

Garlic Mashed Red Potatoes

These were delicious! I used heavy cream instead of skim milk and left out the parmesan cheese. I don't think it's necessary for these. No extra butter or salt needed either! This recipe is now on my Thanksgiving menu! Thank you!

Vegetarian Chili

This is my go-to veggie chili recipe! I subsitute one can of dark red kidney beans for white cannellini beans for more variety. It's great for freezing as well. I suggest reheating the chili on the stovetop as opposed to the microwave. Microwaving it just sucks out all moisture. I serve with cheddar & sour cream. Thanks for the recipe!

Italian Sausage, Peppers, and Onions

I made this as a vegetarian dish using soy protein "italian style" sausage links, & I was a bit nervous how it would translate. But, it turned out great!! My non-vegetarian boyfriend enjoyed it as well. I'd never had sausage before but wanted to try it after I saw the veggie links at the store & this recipe has by far the best ratings I've seen! I did add fresh diced tomatoes, red wine instead of white, & EVOO instead of butter. Thank you! Very Delicious (even as a veggie dish)!
