Six Can Chicken Tortilla Soup

My daughter makes this soup all the time and it is one of my favorite things ever to eat. Normally I would not like as much broth, but it works out perfectly once you put it over the tortilla chips. In fact, she now uses one 32-oz box of chicken broth which is more than the recipe calls for and it is still wondrful. Just allows us to use more torilla chips. Yum.

J.P.'s Big Daddy Biscuits

I have tried for years to make biscuits and the best I have managed to do is just okay UNTIL I found this recipe. They rise high. They have a nice crust and are tender and moist inside. I use butter for the shortening and fat free milk.

Salsa Chicken Burrito Filling

This was so good. My daughter told me "Mom, you do know you're making this again, right?" We really like to load up our burritos so I wasn't sure if the cheese and salsa would be enough of a topping but it was just right to go with the filling. I used three chicken breasts and a 15 oz can of tomato sauce -- I have never seen a 4 oz can of tomato sauce -- and used 1 tsp of cornstarch to make up for not using the taco seasoning. This one is a keeper. Thanks for sharing it.

Simple Sweet and Spicy Chicken Wraps

This was so delicious. I did cut the cayenne pepper in the sauce in half. Next time I will do the same with the cayenne in the chicken, just to match my family's tastes a bit better. Even so it was wonderful.

Green Bean and Mushroom Medley

I made this for Easter and it was delicious. I doubled the recipe, but only increased the butter to 3/8 cup. Also, I was out of seasoned salt so I used 1/2 tsp. of Emeril's Essence. This is a definite keeper.

Slow Cooker Thai Peanut Pork

So outrageously good. I wasn't sure about the two red peppers, but by the time they were done cooking in the sauce they were delicious. I did only use 1/2 teaspoon of the crushed red pepper flakes and it was good, but I think the full teaspoon would have been fine, too.

Pecan Sandies

This cookie is so good, so much better than any store bought ones. They are light and tender and you can really tell why they are called sandies. Just wonderful.

Corn Dip II

I've made this three times in the last few weks and love it. I do use regular canned corn and add some chopped green pepper as a substitute for the mexican style corn. Just so good.

Chex® Muddy Buddies®

Downeast Maine Pumpkin Bread

This is a hit with my family. The first time I made 12 muffins and 1 larger sized(8.5 x 4.5 in.) loaf pan. The second time 2 of the larger sized loaf pans. I had to cook the loaves for about 70 minutes.
