Whipped this up during my lunch break in preparation for a "Comfort Food" dinner party. Doubled the recipe and achieved a perfectly creamy and balanced rice pudding. Added ample raisins (red) and a DASH OF RUM at the sugar/salt stage to allow PLUMPING time (oh, so luscious). Upon reheating, I will add the butter -- or allow the guests to add a slim pat at their discretion and cross my fingers they will!
Save this to your box, ladies and gents, and teach it to your children. A worthy staple recipe for "wow" on a shoestring.
TIP: Combine the beaten egg to the milk before adding to the recipe at the end to avoid any unpleasant scrambling of the egg!
