Potatoes and Peppers

Very good, though I used considerably less oil than was recommended; just enough to get the pan oiled up instead of a full third cup. VERY tasty!

Stuffed Peppers with Creole Sauce

Very time-consuming, but very good. I agree with making more sauce; I had just enough to cover five small peppers, but had another plate of the filling! Will work on portions, but excellent dish!

Cajun-Style Beef and Beans

Using minute rice is fine for this recipe, but the cajun is a bit much. I give it 4 stars because it's a good base recipe, but would need more of a broth and less seasoning to make it smoother. But good nonetheless!

Asian Flair Flat Iron Steak

I didn't have flat iron, but cut up stew meat, which worked just as well. Also, used olive oil to cook it in as suggested by another comment. Served this over brown rice and it was delicious. And quick! Definitely a keeper!

Citrus-Topped Pork Chops

I didn't have fresh lemons/oranges. I served this over white rice with stuffed squash and it was divine. Used the leftover sauce to go over the white rice; I simmered for much longer as I was preparing the squash. FANTASTIC!

Avocado Quick Bread

Allergic to cinnamon, so only used allspice. Didn't use pecans, made my own buttermilk with regular milk and white vinegar, and substituted orange juice for the orange zest. This was EXCELLENT. Paired with honey butter recipe on this site. Good for either as a dessert or even for a breakfast food. Excellent way to use going-bad avocados!

Caribbean Chicken

So moist! I actually marinated the chicken in a duck sauce (no marinara, so I subbed more duck) and pineapple (no grapefruit either!) juice mixture, then baked the entire thing without using the bread crumbs due to other commenters' posts about mushiness. I mixed the spices and sprinkled them on top, then used mango (no nectarines!) around the sides. Definitely moist and scrumptious! Only thing I'll change is to halve the pepper next time, but otherwise, totally FIVE STARS! Made with a steamed cauliflower/broccoli mix and some cheesy broccoli rice for something bland-ish to go with the spicy chicken. Amazing!

Smothered Green Beans

I removed some of the grease as well, cooked the onions, and then set aside. I ended up cleaning out the pan, putting in the water, garlic powder, and cooked onions. I threw in my fresh green beans, covered them, and let them cook. When I could start smelling them, then I added the bacon and continued to cover it. Finally, I added more garlic powder to bring out that flavor more. VERY good! I may be getting fresh green beans from now on!

Skillet Beef and Macaroni

Very basic recipe when prepared as is. Good ingredients, simple to make, very heavy for comfort food. However, very bland in taste as prepared. I tried to add garlic as well as oregano, but to no avail. I'll probably make again if I need to use green peppers (which is the reason I made it tonight), but otherwise, I won't go out of my way.

Orange Cilantro Rice

POSSIBLE WITH MINUTE RICE! I too cut back on the cumin to a tsp and didn't have any onions handy. However, you boil everything together except the cilantro, throw in the minute rice, let it do its thing, and then toss with cilantro. AMAZING!

Roasted Cajun Potatoes

These were AMAZING. Perfect recipe, and it was totally on par. I sliced mine a little thinner, so they cooked for less time, but they came out crunchy and seasoned PERFECTLY. Will make again!

Sweet and Sour Meatballs

The first time I made these, I did make the meatballs from hand. Now, I just use frozen. Great recipe! Also good if you don't have a slow cooker; last night, I just threw everything in the cooking pot and cooked it all together, bouncing between low and medium heat (I didn't want it to simmer TOO much). Great!

I think I will marinate the pork chops next time with the sauce mixture, as it really didn't add anything to the chops. Perhaps that will induce more flavor. Great starting point, though!

I only used 2 cups of cheese and ended up with the most flavorful tortillas (used only five shells). Otherwise, marinade was amazing, and sauce was just right!

Stewed Cabbage

Four Cheese Macaroni Casserole

VERY good. It was my first baked macaroni! Used gemelli because I had no mac, and stewed tomatoes. Had to add some sour cream to make it a bit more creamy, and added bread crumbs on top. Yummy!
