Caribbean Chicken

So moist! I actually marinated the chicken in a duck sauce (no marinara, so I subbed more duck) and pineapple (no grapefruit either!) juice mixture, then baked the entire thing without using the bread crumbs due to other commenters' posts about mushiness. I mixed the spices and sprinkled them on top, then used mango (no nectarines!) around the sides. Definitely moist and scrumptious! Only thing I'll change is to halve the pepper next time, but otherwise, totally FIVE STARS! Made with a steamed cauliflower/broccoli mix and some cheesy broccoli rice for something bland-ish to go with the spicy chicken. Amazing!

Sweet-Sour Franks

Very easy to make and quite tasty. This is a great basic recipe; it may need some dressing up in the spices category, but all in all, still very good. Will make again.

Black Thai Pork

Definitely an interesting combination of flavors. I ended up adding more water because the sauce really was too thick. Otherwise, delicious! May try to bake pork chops next time after coating to free up my stove more. Awesome recipe as is!

Cajun-Style Beef and Beans

Using minute rice is fine for this recipe, but the cajun is a bit much. I give it 4 stars because it's a good base recipe, but would need more of a broth and less seasoning to make it smoother. But good nonetheless!

Corn, Sausage and Pepper Chowder

Could be that I'm sick, but this is an excellent "sick" soup and great for the upcoming winter. Instead of heavy cream, I used 2/3 cup milk and then cornstarch to thicken the soup. Also used garlic powder instead of cloves, and sweet Italian sausage instead of kielbasa, which I de-skinned and crumbled into the soup. Thick, hearty, and perfect! Great recipe!

Asian Flair Flat Iron Steak

I didn't have flat iron, but cut up stew meat, which worked just as well. Also, used olive oil to cook it in as suggested by another comment. Served this over brown rice and it was delicious. And quick! Definitely a keeper!

Easiest Pot Roast Ever

Meat came out very moist and delicious. Giving it four stars because while the meat is good, it could use some actual spices. I'll have to do some doctoring. But otherwise, a very good basic recipe for those just learning the art of slow cookers (i.e. me).

Strawberry Muffins

Good basic recipe, but couldn't really taste strawberries unless I bit into one. Definitely a good breakfast muffin though; may use strawberry jelly to up the flavor. Very good use of strawberries which are about to turn bad.

Stuffed Peppers with Creole Sauce

Very time-consuming, but very good. I agree with making more sauce; I had just enough to cover five small peppers, but had another plate of the filling! Will work on portions, but excellent dish!

Four Cheese Macaroni Casserole

VERY good. It was my first baked macaroni! Used gemelli because I had no mac, and stewed tomatoes. Had to add some sour cream to make it a bit more creamy, and added bread crumbs on top. Yummy!

I think I will marinate the pork chops next time with the sauce mixture, as it really didn't add anything to the chops. Perhaps that will induce more flavor. Great starting point, though!

Sweet and Sour Meatballs

The first time I made these, I did make the meatballs from hand. Now, I just use frozen. Great recipe! Also good if you don't have a slow cooker; last night, I just threw everything in the cooking pot and cooked it all together, bouncing between low and medium heat (I didn't want it to simmer TOO much). Great!
