Banana Cake III

Great banana flavor. I almost didn't make it because of the mayonnaise because I thought that was a strange ingredient. But then thought about it and mayonnaise is just oil and eggs. I'm glad I went for it because this is my go to banana cake now. It is rich and moist and very flavorful. As a personal preference I like to eat the cake cold straight from the fridge. It's a great cake for company too. You can make it ahead and it keeps nicely in the fridge. Everyone I've served this cake to falls for it hard!

Hummus III

Followed recipe exactly. Came out too thick. Makes a huge amount of Hummus. Had a nice flavor. Will keep looking for a better recipe or tweak this one by adding more liquid.

Frank's Favorite Slow-Cooker Thai Chicken

Easy and tasty recipe. I added some Sriracha hot sauce as others recommended. I placed all the thighs on the bottom for me and then for hubby put in a chicken breast on the top. I only had smooth peanut butter so that's what I used. After combining these strange ingredients it was going to be a hit or miss. I loved it! It sauce could of been a bit thicker but it sure was tasty and the meat on the thighs melted in your mouth. So good! My hubby thought it was too bland and the sauce was too runny. I served it over basmati rice. I'm basing the review on my taste buds not hubbys!

Amish Bread

Came out perfect! Nice and light and fluffy and moist. I did bake it in the oven no problem. Had to put foil on the top halfway through so the top wouldn't burn. It rose quite a bit!

Yummy Honey Chicken Kabobs

I marinated the chicken cubes overnight and it didn't really tenderize the chicken or add very much flavor. It also burns easy on the grill and I had medium heat. I guess it was because of the honey. This recipe needs some ginger or something to spice it up a bit. Not making it again.

Broccoli-Cauliflower Salad

I made half the dressing and also reduced the sugar to 3 tablespoons. It came out very tasty. The next time I made it I jazzed it up a bit with 1/4 chopped red onion, 1/3 cup craisins, 1/3 cup pumpkin seeds. It came out excellent!

Marinated Pork Chops

I marinated pork loin chops overnight in the marinate. The flavor was tasty but it really didn't tenderize the meat as much as I would have liked. I think a bone in pork chop would have worked better.

Basil Shrimp

The shrimp came out nice and moist and very flavorful. I bit messy to put on skewers for the bbq - but looks pretty on plate when your done. Great for entertaining.

Mediterranean Potato Salad

This is a great potato salad to make for entertaining. The dressing is very tasty. I only used 1 tsp Dijon mustard in mine though. If you don't have red potatoes russet potatoes work just as well. I've made this recipe a few times and the last time I added a cup of blanched edamame. Keeps well in the fridge for a few days. Give this recipe a try if you're tired of the standard mayonnaise potato salads.

12-Hour Salad

I love that the topping on this salad has no Parmesan cheese in it. I usually layer whatever salad ingredients I have in the crisper over iceberg lettuce greens. I've made it with bacon and without...both are quite tasty! This is a great go to summer salad and fantastic to make for entertaining because you make it up the day before.

Rosemary Ranch Chicken Kabobs

Chicken came out very tasty and moist. I think the longer you marinate the chicken the better the flavour. I have also done this with whole chicken breasts marinated over night. Great for entertaining!

Jimmy's Mexican Pizza

This was an excellent and easy recipe. I had half a can of refried beans left over. The recipe didn't specify how much to put on each tortilla. I guess it's a personal thing. I also put a bit of shredded cheese on top of the meat layer. So tasty!

Asian Orange Chicken

Sauce is way too thick with the 3 tablespoons cornstarch to 2 tablespoons water. Turned out way too thick. Also it is way too sweet. The flour coating on the chicken was disaster! I think cornstarch would have turned out more crispier. The flavor however is very orange which appealed to me. My husband told me I was "Chopped"!!! LOL

Blueberry Cheese Danish

The dough is very dense not like a danish at all. The flavor of the dough itself if nice. It definitely needs more filling. I felt like I was eating only dough. Mine took longer to bake and did leak a tiny bit.

Easy Cream Cheese Danish

Very easy and tasty recipe. I took the advice of other cooks and cut the roll of dough into 8 rounds, flattened them and filled them with the cheese filling. After the danishes were cooled I placed blueberry filling I made on the top and drizzled it with the icing. I added a bit of almond extract to the icing. There are so many possibilities with all the different fillings you can use.

Lemon Blueberry Drop Scones

Nice and moist when warm. I personally needed more lemon icing drizzled on top. I didn't have any yogurt so I substituted sour cream with a tablespoon of lemon juice and 1/2 tsp lemon extract. I will definitly make these again.

Pecan Pie Bars I

Makes a big batch of squares. Nice shortbread crust. I had to bake mine 10 minutes longer. Set up nicely and easy to cut after a couple hours. Next time I will use 1/2 brown sugar and 1/2 white.
