Jam Filled Butter Cookies

Doubled this recipe and got about 5 dozen from it. I used a 1/2 teaspoon measuring spoon dipped in powdered sugar to form the well, then used a heaping 1/4 tablespoon to fill them with jam, and did not have any overfilled. Just be careful not to push the spoon all the way to the bottom or the jam will leak through the hole (still tasty but messy when you try to put it on the cooling rack!).

Mom's Ginger Snaps

Made these today. Very easy and came out well. I did double the spices as some other reviewers suggested, and baked them on parchment paper. I scooped mine out using a half tablespoon measuring spoon, putting the little domes on the sheet and they came out perfect. Watch them carefully though and take them out when they flatten, NOT when they are firm in the middle. Unless you want *really* crunchy cookies. When baked for just 10 minutes on the dot they hardened up a bit on the outside to be crisp and were a tad chewy in the middle and were just perfect. Watch them carefully, they do burn easily.

Baked Omelet

So easy! I hate making scrambled eggs on the stove, and am hopeless at omelets. But this was great. I didn't have seasoning salt or dried onion, but I tossed in some diced raw onion (about 2 handfuls, probably 1/2 a cup or so) instead, and used all cheddar instead of half and half since I had no mozzarella. I baked it for about 50 minutes and it came out perfectly.

Mom's Zucchini Bread

I made 2 batches and used 3 large (but not huge!) zucchini, which was a bit more than the recipe called for but not a lot more. One batch was made plain- no nuts, the other I put mini chocolate chips in. Plain was very good, the chocolate chip was pure heaven. I made some in loaf pans and some as muffins. A little tip: It will be done before it looks done. You really need to test it with a knife to see if it's done or you will overcook it and it will be dry.

Skillet Ham, Cabbage and Potatoes

The person who wrote this recipe must have a much bigger skillet than me! I used a large cast iron skillet (12 or 14 inches in diameter) and it was not big enough. The onion and potatoes and ham filled it up, so I had to make the cabbage seperately. Still, once mixed all together, it was very tasty! I used more than a dash of seasoning salt, also added regular salt and pepper and a bit of garlic salt. I also used olive oil rather than butter, and needed more than 1/4 a cup of water even though i cooked the potatoes for a few minutes in the microwave before adding them to the skillet.

Easy Mexican Casserole

I changed this up a bit to try to make it healthier. I used corn tortillas on the bottom instead of torilla chips, and layered the ingredients in 2 layers, like a lasanga, hoping it would hold together better. I used one layer of corn and another of flour torillas. I used a blend of cheese ("mexican style") and low fat sour cream, added an additional can of chili beans, and used ground turkey instead of beef. I also added a green pepper, an onion and green chilis and some more spices, as many reviewers said it was bland. It wasn't spicy at all so next time I'll add more to it. It still was pretty tasty and a hearty meal with a nice salad.

Best of the Best Blueberry Muffins

Tasted yummy--especially when fresh out of the oven. A little dry, but good. But I never use paper liners and these muffins wouldn't come out of my greased, non-stick pan. I had to use a knife to get the bottoms out.

Chocolate Chip Pumpkin Bread

This was SO GOOD! Very moist. I used 2 pans instead of 3, so I had 2 bigger loafs, and they took a little bit longer to cook, about 10-15 mins longer. I also added another 1/2 cup of chocolate chips, which i think made it a bit yummier, and omited the nuts. It's good fresh out of the oven--but if you wait a day it's even better! It's great to make a couple batches to give as gifts or to bring along for a holiday potluck party. I hope my other loaf lasts long enough to make it to the party! The one i kept for myself is almost gone!

Oatmeal Peanut Butter and Chocolate Chip Cookies

These cookies are awesome! soft and chewy, moist in the middle and slightly crisp on the bottom. I made them as a treat for my boyfriend and his family, and they all gobbled them up. I made them a second time during a family scrabble match, and everyone was fighting over them! They really are delicious, if you like peanut butter and chocolate they are for you. Two tips: if you really like peanut butter, add an extra 1/4 of cup (or more) and also, it comes out better if you add the peanut butter and water AFTER you put in the flour mixture, not before.
