Parmesan Chicken

This is the exact recipe I've used for over 20 years--since my kids were little and I wouldn't buy the mystery meat chicken nuggets at the grocery store. Instead of frying, I have always baked them. They've always been a family favorite!

Blackberry Cobbler II

I made this cobbler and was following the recipe exactly. When I go to the point where you cook the berries, lemon juice, sugar, water and cornstarch in the skillet; the berries cooked down so much I added about 4 more cups of berries. It came out amazing!! We ate it hot with home made vanilla ice cream. YUM! The only thing I would do differently is make about 1 1/2 times the crust for the top. I almost didn't have enough to cover my cobbler and we all like a lot of crust!

Chicken Florentine Casserole

I read most of the reviews before I prepared this recipe. I agree, the chicken would be dry if baked. I pan seared thin chicken fillets in a small amount of butter in a pan. Romoved the chicken from the pan and sauted sliced portabello mushrooms and one pound of fresh baby spinach in the same pan. I followed the recipe directions for the white sauce exactly. I thought one tablespoon of Italian seasoning was overpowering. I will use about a tsp. next time. It also needed salt. This was a wonderful dish served over angel hair pasta.
