For those of you who so kindly have weighed in on "I have a question", please do NOT make the recipe I posted on there as being great and wonderful! I said I tweaked it a bit and added some EggBeaters. Well, I know what EggBeaters is but I have never used it in cooking. I think I was a little heavy handed with it!  When I said my Coquito was thin and watery and I wanted it to be thick and creamy? I got my wish. It WAS great Sunday night when I made it. But after being in the frig overnight, I poured a small glass Monday evening and it's a cross somewhere between a smoothie and partially set pudding! My husband laughed his you-know-what off at me! It tastes great but looks kind of gloppy. I could freeze it and make ice cream!
So, fellow foodies, if you try my recipe, do NOT add as much EggBeaters.  I will try again later this week. I'm embarassed to tell yall this but didn't want anyone to make Coquito pudding.

Thanks for owning up to your mistake. Always great when we can laugh at disasters, & I have made plenty of them! I know Egg Beaters are healthier but, I prefer the real thing, they just seem to do better.

About Me
My mother is an excellent cook so I began cooking at an early age. I have taught both of my children to cook as well. I'm married, have two almost grown kids and my husband and I own a business and work together.
My favorite things to cook
I love to bake anything. I also enjoy cooking on the grill. In the summer it's too hot to turn on the oven. I make the entire meal on the grill.

Baking and making candy with my daughter during the holidays. We make pounds of candy and cookies and give it all away as gifts to neighbors and friends. *This tradition has turned into a new business! My daughter and I started making gourmet cakeballs in the fall of 2010.

The first wedding cake I made at the age of 17.
My cooking tragedies
The time I was following a recipe for a hot soup. I put hot vegetables in the blender, put the top on it and turned it on. The recipe did NOT say to leave the lid off and cover with a towel. The hot vegetables hit me in the face and splattered all over the ceiling. Not pretty.
