For those of you who so kindly have weighed in on "I have a question", please do NOT make the recipe I posted on there as being great and wonderful! I said I tweaked it a bit and added some EggBeaters. Well, I know what EggBeaters is but I have never used
it in cooking. I think I was a little heavy handed with it! When I said my Coquito was thin and watery and I wanted it to be thick and creamy? I got my wish. It WAS great Sunday night when I made it. But after being in the frig overnight, I poured a small
glass Monday evening and it's a cross somewhere between a smoothie and partially set pudding! My husband laughed his you-know-what off at me! It tastes great but looks kind of gloppy. I could freeze it and make ice cream!
So, fellow foodies, if you try my recipe, do NOT add as much EggBeaters. I will try again later this week. I'm embarassed to tell yall this but didn't want anyone to make Coquito pudding.
