Green Chile and Rice Casserole

Really delicious! I didn't have the kind of rice recipe calls for, so I just cooked up 1 cup (raw) white rice(not instant)and then baked as written with the sour cream, cheese and fresh whole green chiles. Can't go wrong with the fresh ones from Hatch! Mighty tasty!

Creamy White Chili

So delish! Have made this twice now (in one weekend!) left out the whipping cream both times because I didn't have any and honestly didn't miss it nor it's calories. Also, used pinto beans one of the times AND simmered it in my crockpot for several hours before adding sour cream! Easy peasy, I tell ya!

Prosciutto-Wrapped Cherry-Stuffed Chicken Breasts

Top notch recipe! Watch the video for step by step instructions; it really makes everything clear! Husband thought it was a tad too salty (which I didn't even do all the salt that was suggested). Used dry herbs (gasp)! 1/4 tsp each and baked on a small jelly roll type pan. 25 minutes was perfect; the sauce was delightful. Served over rice pilaf. I will definitely make again!

Creamy Avocado Cucumber Soup

Have made single servings of this 2 days in a row now; add the heat, it's good! I love the avocado in it. This soup even makes cucumbers taste good!

Bacon-Wrapped Chicken

yummy! I had fully cooked bacon on hand which turned out great; they wrap well and they stay crispy during baking time. Also used fresh green chile which can't be beat. 45 minute baking time was plenty! I'm ready to make this dish again!

Turkey Wraps

excellent taste; family loved it! This beats the ordinary sandwich any day. Because of personal preference, I left out the chives, used only 1/2 of the dijon amount and added sliced raw mushrooms. 2012 Update: still making these delicious wraps! Most of the time I just use flour tortillas as that is what I have on hand. Also, I use provolone or pepper jack grated cheese for an extra spicy kick...delightful!

Breaded Ranch Chicken

Family loved this! I used bread crumbs that I had on hand instead of the cornflakes and dipped the tenders in an egg/milk wash before dipping into the crumb mixture. I then used the butter to pour over the chicken before baking for about 40 minutes. Delish!
