Easy Zucchini Soup

Wow with the flavor! Had some zucchini that needed to be used and I was looking for an easy recipe. This is a winner for sure! I was going to pack it into containers for lunch, but I may just eat it all right now ;)

Spinach and Orzo Salad

Good flavors. I toasted the pine nuts first and added Kalamata olives. I also used gluten free orzo. Sometimes the gluten free pastas do not work well in pasta salads or anything leftover for that matter, but the orzo worked out nicely and absorbed the flavors of the dressing in this one.

Touchdown Chili

I have to admit, I was pretty nervous about trying this one...the reviews were kind of all over the place. Some loved it "as is" others thought the beer and the vinegar were too much. Plus I was bummed out that very few of the reviewers commented on which beer they chose to use. In the end I chose this recipe because the list of ingredients was interesting and I was looking for something different. I'm glad I took a chance. And just so you know, I used a can of PBR (I figured a mild beer wouldn't over power the chili, like other reviewers mentioned they had run into). Also like other reviewers mentioned I threw it into the crock pot after browning the beef and adding seasonings. I kept it going for about 5 hours on low. The only changes I made were using ground turkey instead of beef and I added 1 can of pinto beans and 1 can of canellini beans. Other than that I followed the recipe. I will definitely make this again. **I just finished my second helping and wanted to add that the beer flavor does kind of linger in your mouth a bit. I think next time I will try a better beer, still mild but step it up a notch. If it's going to linger it may as well be one I like ;-)

Asian Ginger Dressing

I'm not usually a salad person...it's not that I don't like vegetables it's just that I get bored. To me they are like sandwiches, everyone else always makes them better than you can at home. After a recent road trip I discovered a wonderful Kale & Beet salad that I so badly wanted to duplicate. It was served with Ginger dressing and I have to say this recipe is PERFECT! Such wonderful flavor. The salad didn't come out exactly like the restaurant, but thanks to this dressing it was still amazing! Can't wait to try it on other salads.

Grilled Peanut Butter and Banana Sandwich

I used Udi's gluten free sandwich bread and put it in our quesadilla maker, amazing and simple! Thank you for a quick, easy, healthy and tasty sandwich. If you use a quesadilla maker it will only take a minute and a half to two minutes...no flipping required.

Refried Beans Without the Refry

So easy and so good!! My husband and I have nachos with all the fixin's including refried beans probably once a week and these were so much better than any canned beans we have tried. The only modifications I made were to add the whole jalepeno pepper (you are seeding it before chopping it so it is only adding flavor not heat) and a little more cumin, probably 1/2 teaspoon. I froze some in small containers, one of which was thawed last night, and they still tasted great so I can confirm that they freeze well. Hubby loved them....goodbye canned refried beans. Thank you for the great recipe.

Tuna and Noodle Salad Light

Just what I was looking for after traveling and craving real food with fresh ingredients, thank you. Like other reviewers I think it needs a little something to get it up to 5 stars for my taste, but the recipe is very adaptable. I added some fresh basil and parmesan. I will make this again and play around with the ingredients more. Nice to have a tuna noodle dish without the heavy ingredients.

Sparkling Punch

Prepared as listed except for omitting the sugar completely, it really didn't taste like it needed it. Served this at a recent Christmas party with family, everyone liked it and the teens in the group devoured it. As other reviewers suggested I made a double batch which was perfect, none leftover and my party only had 13 people. I will definitely make this again.

Slow Cooker Chili II

Very good recipe. Every once in a while I see someone post that you should not rate a recipe that you made changes to, and I understand that view but I also think that many of us enjoy reading through the changes/variations to get other ideas. I think I will send the idea along to allrecipes.com that we should have 2 ways to rate a recipe - "followed recipe exact" and "changes made" or something like that. Then everyone will be happy, well...not everyone. Anyways, on with my review - this chili came out great, and yes I made some changes. I did not add celery as I'm not a big fan. I used Canellini, Pinto and Black Beans and added a can of diced tomatoes with green chiles. I was concerned as another reviewer posted that the base might be too "tomatoee" but it had fantastic flavor. Thank you for a great chili recipe!

Mozzarella-Stuffed Pesto Turkey Meatballs

Very tasty! Followed the recipe exactly and they came out great. My 17 year old daughter who is somewhat picky loved them! This one is a keeper, thank you for a great meatball recipe with wonderful flavor! We froze the remaining meatballs and I'm looking forward to the next pasta dish with them. As other reviewers mentioned some of the mozzarella did bubble out during baking, which I was concerned about...but they still came out amazing.

Jamie's Minestrone

One of the few soups my husband likes is minestrone, which up until recently was courtesy of campbell's....I have tried a couple of recipes that didn't turn out so great, not enough flavor. This one is the winner, my husband will never again have minestrone from a can! Thank you Jamie! Fantastic flavor and chock full of great veggies. Changes made, I chopped the veggies smaller than suggested (personal preference) added 4 cups of chicken broth and no water, an extra can of beans (used canellini instead of kidney) and an extra can of green beans. I also used dried oregano and basil instead of fresh. Tasted great the first day so I know it will be even better tomorrow...looking forward to the leftovers.

Italian Pasta Salad I

Happy Accident - I usually make this pasta salad exactly according to the recipe, but I goofed this year...and I'm glad I did! I had 3 dressings on my grocery list - Italian, Creamy Caesar and Ranch. For some reason I thought I was supposed to add 1 cup of each to this recipe so in they all went. After I realized I goofed and the ranch was for something else I was making, my pasta salad now had a whole extra cup of dressing. So, I made up more rotini and decided I now had to add more "stuff" to this salad. In went black olives, green olives, cucumber, plum tomatoes, and more parmesan cheese to make up for my mistake and absorb some of this dressing. Amazing! Had the hubby do a taste test and immediately got "Mmmmmmm....." followed a few minutes later by "Don't you dare add anything else to that salad, I can still taste it and it's perfect!!" LOL! Giving it 5 stars even though I made changes, because it really is great as-is....but I'm glad I goofed and will now add all of these new items going forward. **I did end up having to add slightly more dressing after all of these additions and I used a bit more Italian and Creamy Caesar.

Easy Black Bean Soup

fantastic flavors in this soup, was concerned about the different spices but they melded together very well. I did make alterations based on what I had on hand, 1/4 tsp ground ginger instead of the 1 tsp fresh chopped, threw a can of diced tomatoes into the blender for a minute because I did not have puree, 2 cans of regular refried beans (pinto I believe), 1 can of black beans and 1 can of cannelini. After it was done cooking I did not care for the consistency so I blended it in batches until there were no whole beans in the soup. Made it creamier and I much preferred this consistency. Had it the next day for lunch with a dollop of sour cream.....delish! I think you can mix up the beans however you want, it's the spice combo that makes this one a winner! Thank you for sharing!

Mexican Bean Salad

I was looking for a mexican salad my husband would love, and this is the winner! Took other reviewers' advice and halved the oil, vinegar and sugar. Also let sit over night for more flavor. Making it for the second time now and SO looking forward to having it tomorrow night with some scoops nacho chips! One other adjustment I made is swapping out the kidney beans for pinto, just a preference.

Thai-Style Peanut Sauce with Honey

Chicken Wild Rice Soup I

Mmmmmm.....so delicious! Used a seasoned rotisserie chicken to add flavor, didn't have dry mustard so I used 1 tsp dijon instead, cooked the wild rice in chicken broth instead of water (again, to add flavor) and used Bob's Red Mill Gluten Free All Purpose Flour, which of course doesn't change a thing, just wanted to point out to those trying to avoid gluten that it can be done with this recipe and still taste amazing. My daughter had friends over and one of them said as the soup was cooking "Do I smell Curry?" Who would have thought she could pick that out when there's only a half teaspoon in the recipe. All her teenage friends tried it and loved it...one even asked me to send her the recipe and said it tasted like Fall. Wish I could give it 6 stars because my super picky daughter loved it as well which means I have one more "go to" recipe for the family - bonus! Thank you!

Terrific Turkey Chili

Fantastic flavor! Only changes I made were using chili powder instead of the chili pepper flakes and using 2 cans of diced tomatoes with chili peppers instead of the can of crushed tomatoes and the can of chopped green chili peppers. This is definitely a keeper and will make it into the dinner rotation. Usually I don't like soups or stews until the second day when the flavors have had a chance to meld, this one was fantastic on day one.

Teriyaki Marinade

Very good, used this marinade for both tofu and beef tips. Excellent with both. Used some fresh diced red onion instead of flakes, dash of ground ginger instead of fresh and a minced garlic clove instead of garlic powder...because that's what I had on hand. Will definitely make again.
