Slow Cooker Reuben Dip

Every time I bring this to a potluck, others ask for the recipe. Some comments: 2 cups of corned beef = ~3/4 lb. Serve with rye Triscuits and/or Trader Joe's pumpernickle pretzels. Can't go wrong with Frank's canned kraut. Not a huge kraut fan? Cut down the amount. (I use half.)

Roquefort Pear Salad

Wow! This salad rocks! Each mouthful is so, so yummy! Slight alterations: 1. Used a bag of baby spinach for the lettuce. 2. Didn't have time to carmelize the pecans myself, so I used a package of pre-candied pecans. 3. Cut everything into small bits to serve it more as a "chopped salad." That way you get the true medley of flavors in every bite. Since there were only two of us eating dinner, and this was a side dish, there were some leftovers. It was just as tasty the next day ... not as pretty, mind you, because avocado never looks good the next day, but it was just as delicious!

Chicken and Spinach Alfredo Lasagna

This lasagna was terrific! I made it for a small dinner party, and everyone loved it! The most time consuming step is shredding the roasted chicken. Per someone's suggestion here, I purchased a chicken that had been already roasted at the grocery store. Since the dinner party was on a week night, I assembled the lasgna the night before. That way, the night of the event, we merely had to pop it in the oven. It came out great! There were a couple of pieces left over, which we had for dinner the next night. That, too, was delicious! We'll definitely be having this again! Thanks so much!

Fantastic Crab Dip

This dip is delicious hot or cold. Every time I make it, people rave, and inevitably, someone asks for the recipe. I serve it with a loaf of Pillsbury French bread that's been baked in a flower-shaped tube and a loaf of cocktail rye. Crackers are great too. Thanks!

Coconut Crust

Old Fashioned Coconut Cream Pie

This pie is fabulous! I've make it for three different get-togethers recently, and each group couldn't get enough of it. Instead of using a regular pie crust, I used the coconut crust recipe that appears elsewhere on this site. It's simply coconut and butter pressed into a pie tin and baked until golden. I'm in coconut heaven!
