Carol's Baked Ziti Casserole

Reviewed: Feb. 9, 2013
This recipe was great -- I'm going to replace my current baked ziti recipe with this one. I did add 2T of Tastefully Simple garlic bread seasoning but even if you don't have that I'd recommend adding some seasonings of your choice (oregano, garlic, etc). I also mixed the sauce in with the ricotta mix instead of layering it. I found that it only needed to cook for 35 minutes and I took the foil off about 10 before the timer was set to go off so it got a little brown on top. Yummy!

Tuna Noodle Casserole III

Reviewed: Nov. 25, 2010
Per another person's post, I added 1/3 cup sour cream and 1/3 cup milk to the soup. I also added a couple handfuls of frozen peas and I mixed the bread crumbs with some melted butter for the topping. It turned out delicious!!!

Stuffed Zucchini

Reviewed: Jul. 23, 2013
Excellent! My entire family loved this! I used ground turkey since we just ate sausage two days prior, added some fresh basil, but otherwise followed the recipe exactly. I used two gigantic zucchini from my garden to make 4 boats and it was the perfect amount of filling. (They didn't fit into a 9x13 pan so I used 2 cookie sheets but still covered them with foil and lined the pan with foil for easy clean-up. Worked great!)

Baked Pork Chops I

Reviewed: Aug. 3, 2011
Made this recipe as outlined above and it was PERFECT! The only thing I changed was cook time - pork chops were done in 35-40 minutes and then I added the sauce to the top and cooked for another 8-10 minutes. My family absolutely loved it! Definitely a keeper!

Blueberry Zucchini Bread

Reviewed: Sep. 16, 2014
Cut oil in ½ and replaced with ½ c applesauce; replaced ½ of white flour with whole wheat flour; replaced ½ of white sugar with brown sugar. Otherwise kept everything the same, took other user's recommendation and coated blueberries in flour before adding to mix. Delicious!!

Hearty Vegetable Lasagna

Reviewed: Oct. 30, 2013
OUTSTANDING! We absolutely loved this recipe! I had a lot of peppers so probably doubled the recommended amount using half red and half green bell; added a bag of fresh spinach to the veggies in the simmer pot; also found that 1 and a half jars of sauce were more than enough. I made this in a regular lasagna pan and it worked out perfectly. Also, recipe directions weren't clear on this, but be sure to top the lasagna with a last layer of noodles, tiny bit of sauce, and then the rest of the mozzarella. This will be my go-to recipe for lasagna from now on!

Extreme Chocolate Cake

Reviewed: Jan. 2, 2013
Made the cake exactly as outlined above (except used a vanilla buttercream icing) and it turned out great. My husband prefers a darker chocolate cake made with a cup of coffee but everyone else loved this cake.

Caramelized Turnips

I added a diced onion and substituted brown sugar for the white sugar and it turned out great. The first turnip recipe (and I've tried a bunch) that my family and I liked!

Chinese Chicken Fried Rice II

Reviewed: Dec. 3, 2012
Good but definitely not as good as fried rice you would get in a restaurant. Next time I will omit the pepper since it is very overpowering in this recipe.

Tandy Cake

Reviewed: Jun. 4, 2012
This recipe is great! I made it in a 9x13 cake pan and if using this size I would recommend lowering the peanut butter amount back to 1c. I also used all the leftover Hershey's eggs and kisses from Easter for the chocolate topping and it worked perfectly -- double bonus!!

Banana Cake VI

Reviewed: Jan. 25, 2010
FANTASTIC!!!!! Made a couple minor changes based on recommendations from other bakers: used 2 c white sugar + 1/4 c brown sugar, and did not have buttermilk so used same amount of regular milk + 1.5 T of vinegar. Baked cake at said temp, but required an extra 20 minutes of baking time until it was done. This was a super-moist and delicious cake that I served for my husband's birthday. Everyone LOVED it & I will definitely make it again!
