Janet's Famous Banana Nut Bread

Easy to follow instruction. I chose to use my oven to bake it. Doubling the recipe netted me two loaves of bread and a dozen muffins. Very delicious!

Cilantro-Lime Rice

Made this rice dish alongside the "Chicken Breasts with Lime Sauce" recipe from here. Turned out fantastic. Since the chicken recipe called for lime juice and having to cut that recipe's ingredients helped me with a half of a lime left over for this recipe. Instead of using a chicken bullion, I used a "Not Chick'n" bullion cubes instead. Bottom line, fantastic dish that is going in my recipe box for future use. Thanks for sharing the recipe.

Chicken Breasts with Lime Sauce

Great dish. Used coconut oil instead of olive oil as well as cutting the quantity of butter and lime in half due to only making dinner for two rather than going all out with six servings. I liked the taste though the chicken could have been left on for longer. I filleted the chicken breast and still took a 7 minutes per side to get the chicken done on medium heat. Increasing the heat would only burn the outside breadcrumb mixture faster. Extra couple minutes seemed to do the job. Served this dish with green beans and a lime/cilantro brown rice recipe from here. Used half the lime on the chicken and the other half on the rice. The whole meal came out fantastic. Thanks for sharing the recipe. It is going in my box for future use.

Apple Cider Chicken Marinade

Cooked per recipe verbatim and, to the point, fantastic meal. I look forward to making this marinade again. Cut it up after grilling and used in a salad. This is on my top 5 chicken marinades!

Beef Bulgogi

Used the marinade with a roast rather than thinly sliced beef (ate this dish in Okinawa a few times). Replaced the Sesame Seeds with Sunflower seeds and the green onion with a vidalia onion minced. The roast was tender and received positive comments from the family without prompting which is always a good sign.

Honey Ginger Carrots

I was expecting the honey/butter/lemon juice/ginger to thicken a bit more and was left with a runny mess. The recipe tasted great, just disappointed a bit is all.

Roasted Rosemary Chicken And Vegetables

Fantastic recipe. Didn't have eggplant, however, didn't really need it. Recommend two red onions if using small ones. Also, modified cook time to 25 minutes for chicken AND vegetables (leaves the veggies more crisp which we like better than soggy veggies). Added photo of plated dish. Tasted fantastic!!!!!

Herb Rubbed Sirloin Tip Roast

Will definitely keep some of this rub in a jar off in the corner for future use. Roast was a bit tough still. I will cook it longer by probably a half hour. Never attained the recommended internal temp listed. Wife and Step Dad both gave it a good review.

Orange Beef Kabobs with Grilled Fruit

Didn't have rum and used Chuck Roast instead of Sirloin. Didn't matter to my discerning household, thumbs up all around and a drop of the recipe into the "Will Make Again" folder of the recipe box. Great recipe!!

Bones of the Dead

Made this recipe with Spelt flour instead of all-purpose flour. Using spelt flour means increasing the amount used. I used 3 1/2 Cups. Overall, I loved how it turned out, however, wife felt it was a little dry and hard for her taste.

Mushroom and Swiss Chicken

Was a little shy on the mushrooms (wife commented it needed more) to use up the ones already sliced up from the day prior. Will add more cayanne than the recipe called for. Served with carrots and brown rice with Agave Nectar lightly used over both. Definitely a keeper recipe.

Spicy Strawberry Salad

Game on for this recipe. The amount of sugar was a bit much and didn't really allow any type of "spicy" taste to hang in there. Made this for myself and my wife, both adding this recipe to the once a month meal. Going to try Agave instead of sugar next time. Also, didn't have pecans, so substituted them with pine nuts. Worked out great.

Halibut Steaks

Tried this one out on my wife since she wasn't crazy about many of the other "fish" recipes I have tried. When asked, she said she would prefer this recipe over any of the others I have tried. Really liked the vegetable topping and I have them in the fridge all the time anyways. Great recipe and very easy to make and put together.

Spicy (even for my stepson) so knocking down the "hot" level a few notches. Otherwise, we all had seconds because we wanted to not because we had to eat the dish or throw it out. Not bad.

Maple Dill Carrots

Not a bad recipe overall. Dill amount needs to be taken down a notch or the amount of carrots needs to be increased. Otherwise, it was a taste addition to the meal.

Gelatin Spritz Cookies

I have never made anything other than chocolate chip cookies before and that was with a pre-made batter. Great recipe and better than any store bought that I have ever had. Keeper for the making. Ingredients and cook time right on. Nummmmmm!
