Chewy Whole Wheat Peanut Butter Brownies

YUM! I made these with all whole wheat flour, a little extra water because of the extra whole wheat, and added some honey and oats to the recipe. WOW. These were absolutely delicious! They came out to the perfect moist & chewy consistency for brownies. Yum!

Blackberry Cobbler

I've gotta say - for a recipe that's so simple, this was sooo good. I made these in individual dishes so I could give them to my boyfriend for Valentine's. He loved them! Thanks for a great dessert recipe. :-)

Oatmeal Maple Syrup Muffins

Delicious! I make these with whole wheat flour and leave the rest of the ingredients the same. Sometimes I add the streusel topping from the "Brown Sugar Instant Oatmeal Muffins." I've made these several times and they always come out moist and delectable. Best muffins ever!

Pecan Pumpkin Biscuits

WOW! These are amazing! I made them with all whole wheat flower and a little extra pumpkin...And yum! These came out really moist and delicious. Couldn't ask for better pumpkin biscuits. Mmmm!

Orzo with Parmesan and Basil

Yummy! I used to make another orzo recipe on here, but decided to give this one a try because it was a little healthier, using less butter - and boy am I glad I did! YUM. I usually add a little garlic to mine too. I made it 2 nights in a row, I liked it so much, and will probably make it again this week. When I don't have chicken broth, I use a chicken bouillon and water, like another reviewer suggested, and it turns out just as well.

Golden Pumpkin Rolls

WOW! I made half of this recipe with whole wheat flour, pumpkin pie spice instead of nutmeg/ginger/cloves, and they turned out so delicious and moist! The only problem I ran into was the dough didn't rise at first, so I had to mix up another package of yeast and knead it into the dough, and then it rose just fine. That was probably an error on my part though (I probably had the water too hot or needed more yeast for the whole wheat flour.) This recipe definitely deserves all 5 stars!

Baked Macaroni and Cheese I

This turned out great! I used only 2 cups of cheddar, plus 1/2 cup parmesan and 1/2 cup mozzarella for the topping. The sauce turned out great and was the perfect thickness. I made sure to add the milk slowly, and it took awhile to reach the right consistency, but it really turned out tasty and the cheese melted perfectly in the sauce. So very good! Would definitely make this again. :)

Pumpkin Smoothie

I love pumpkin and I love this! Perfect for those of us who want pumpkin smoothies but don't have yogurt on hand. I make a smaller version since I usually just make this for me, and I add pumpkin pie spice in addition to the cinnamon, use canned pumpkin, and a dash of vanilla. Since my pumpkin's not chilled, I usually add a few ice cubes too before blending. Mmmmm good!

Potato Bacon Chowder

This was GREAT! I didn't have potatoes on hand, so I made it with frozen diced potatoes/hashbrowns and was surprised that it still turned out really good! I had to add some extra flour because the consistency was a little thin, but this might be due to the aforementioned change. Although the diced potatoes were mostly thawed, I had to simmer it on the stove for about 45 minutes rather than 10 so the potatoes were thoroughly cooked & soft. I took others' advice and added cheddar cheese on top. Also used low-fat milk and low-fat sour cream. Yum yum yum!

Ham and Noodle Casserole

This gets a high rating for being tasty and soooo easy to make. I use whole wheat egg noodles and low-fat or fat free sour cream, and 98% fat free cream of chicken soup. I also use 2% mozzarella. Even with these healthy modifications, it is still really good!

Peanut Butter Loaf

5 stars! It came out beautifully! :) Also gets 5 stars because I replaced with all whole-wheat flour and it still turned out great (few recipes do that as well as this one did!) So, here's what I did: Used whole wheat flour instead of white flour. Doubled the peanut butter to 2/3 cup. And about halved the brown sugar (1/2 cup or less) plus 1/4 cup honey. I didn't have any buttermilk, so I used regular milk. Even with all those subs, it turned out AMAZING. I know some people don't like ratings with substitutions, but I love them because it helps me alter recipes to fit my whole-wheat-only diet. :-) I found other reviewer's information very helpful and am so excited about this recipe!!! Thank you for posting it here!!! It came out moist & delicious! :-)

Ricotta Cheese Pancakes

Oh my gosh - these were AMAZING!! I'll be making these again and again - soooo good. They were the perfect size, cooked wonderfully, and came out really light & fluffy, but not at all dry (I hate dry pancakes.) I couldn't ask for better pancakes! I used skim ricotta, one egg instead of the egg substitute, real sugar, and whole wheat flour. The recipe made 2 large pancakes (and like another reviewer, I sprinkled just a bit of powdered sugar on top.) Yum yum yum!

Raspberry Walnut Baked Brie

Yum! I took others' suggestions and cut the pastry puffs into small squares, filling each with a teaspoon of brie. Instead of raspberry jam, I used cinnamon apple jelly for some and pumpkin butter for others. WOW. Those flavors, with brie & walnuts, were amazing.

Mom's Yummy Onion Casserole

WOW! So delicious! I had to change the recipe some due to lack of ingredients in my pantry... Only had 1 onion but I still used the same amount of sauce. Cream of chicken instead of cream of mushroom (and fat free). Low-fat margarine. And since I didn't have potato chips, I used diced potatoes instead (which soaked up that extra sauce.) All I can say is... YUM YUM YUM.

Basic Sauce for Pasta

Delicious - especially for a super easy and quick-to-make marinara-type sauce. Great for a weeknight when you don't have a ton of time to cook. I made the recipe exactly as written, except for parmesan cheese instead of cheese sauce. It was so good and great as a topping for a cubed steak parmesan that I made! Thanks for the recipe!

Pasta Carbonara II

This is great and really filling! I've scaled down the recipe for 1 person and it still turns out wonderful. Sometimes I cut back on butter or use a healthy type of butter and it still turns out really good. I also use whole wheat pasta - yum! This reminds me a little of a skilletini-type dish I used to order at Carraba's. The dish is no longer offered there, but this helped bring back some great memories!

Tomato and Garlic Pasta

This is delicious, easy to make, and I feel so healthy when I have it! I always use whole wheat angel hair pasta and add a dash of balsamic to the sauce per another reviewer's suggestion. Wonderful!
