Potato Bacon Chowder

This was GREAT! I didn't have potatoes on hand, so I made it with frozen diced potatoes/hashbrowns and was surprised that it still turned out really good! I had to add some extra flour because the consistency was a little thin, but this might be due to the aforementioned change. Although the diced potatoes were mostly thawed, I had to simmer it on the stove for about 45 minutes rather than 10 so the potatoes were thoroughly cooked & soft. I took others' advice and added cheddar cheese on top. Also used low-fat milk and low-fat sour cream. Yum yum yum!

Light Wheat Rolls

I was very impressed! I halved the recipe and made this with all whole wheat flour (about a 1/4 cup less than called for) and 2 packages of yeast. Also added a little more sugar, as other reviewers suggested. I was amazed at how wonderfully the dough rose and how easy it was to knead. I tied the dough into knots and they turned out great. The rolls were really light and fluffy - a great texture. They warm up great too. I think that because I used all whole wheat flour, it was a little bland. I'll have to experiment with ways to make the "all whole wheat" version tastier. :)

Pumpkin Smoothie

I love pumpkin and I love this! Perfect for those of us who want pumpkin smoothies but don't have yogurt on hand. I make a smaller version since I usually just make this for me, and I add pumpkin pie spice in addition to the cinnamon, use canned pumpkin, and a dash of vanilla. Since my pumpkin's not chilled, I usually add a few ice cubes too before blending. Mmmmm good!

Feta and Bacon Pasta Sauce

This was really quite tasty! I used green onions instead of leeks and low-fat milk and cheese. I took some other reviewers' advice and added an additional 1/2 cup of milk and 1/2 cup of white wine (yum) and the sauce was definitely thick enough! I did half of the feta and added parmesan to the sauce. I served it over whole wheat fettuccine. All in all, it was a little richer than I normally prefer, but still really really good. Thanks for the recipe!

Prosciutto and Parmesan Pinwheels

These were yummy! I had to cook them a bit longer (25 minutes) and because I was out of mustard, I brushed the pastry with olive oil and a bit of garlic and pepper. I got a lot of compliments on this! Would definitely make this again. :-)

Red River Beef Stroganoff

Absolutely delicious. I halved the recipe, used about half the onion, and used low fat sour cream. It was absolutely delicious and the sauce was the perfect thickness. Served over whole wheat noodles.

Baked Macaroni and Cheese I

This turned out great! I used only 2 cups of cheddar, plus 1/2 cup parmesan and 1/2 cup mozzarella for the topping. The sauce turned out great and was the perfect thickness. I made sure to add the milk slowly, and it took awhile to reach the right consistency, but it really turned out tasty and the cheese melted perfectly in the sauce. So very good! Would definitely make this again. :)

Red Enchilada Sauce

Something about this just didn't quite work for me, but I'm not sure what. The consistency was great (I used tomato paste instead of sauce, like others suggested.) Maybe it was the combination of Italian spices with Mexican.

Slow-Cooker Chicken Tortilla Soup

I didn't have any corn on hand, so had to skip that ingredient. And since I didn't have canned enchilada sauce, I made my own from another recipe on this site. But something about the whole combination just didn't quite work out for me. It was a good consistency, especially with adding cheese and sour cream before serving. But it just wasn't "amazing." Maybe I'll try it again with a canned sauce and see if that makes it different, or with a different type of salsa.

Garlic Parmesan Orzo

Wow - this was absolutely amazing!! The firs time, I made it exactly by the directions and it was great. The second time, I halved the recipe and since I was out of milk, I followed another reviewer's advice and substituted low fat sour cream. That was delicious too! This is really really good.

Ricotta Cheese Pancakes

Oh my gosh - these were AMAZING!! I'll be making these again and again - soooo good. They were the perfect size, cooked wonderfully, and came out really light & fluffy, but not at all dry (I hate dry pancakes.) I couldn't ask for better pancakes! I used skim ricotta, one egg instead of the egg substitute, real sugar, and whole wheat flour. The recipe made 2 large pancakes (and like another reviewer, I sprinkled just a bit of powdered sugar on top.) Yum yum yum!

Raspberry Walnut Baked Brie

Yum! I took others' suggestions and cut the pastry puffs into small squares, filling each with a teaspoon of brie. Instead of raspberry jam, I used cinnamon apple jelly for some and pumpkin butter for others. WOW. Those flavors, with brie & walnuts, were amazing.

Chewy Whole Wheat Peanut Butter Brownies

YUM! I made these with all whole wheat flour, a little extra water because of the extra whole wheat, and added some honey and oats to the recipe. WOW. These were absolutely delicious! They came out to the perfect moist & chewy consistency for brownies. Yum!

Wisconsin Five-Cheese Bake

I was impressed with how well this turned out! I didn't have all the cheese on hand, so I used parmesan, skim mozzarella and skim cheddar, and skim ricotta. I didn't have heavy cream, so I used 2% milk cooked with flour & butter until it was thick. I used whole wheat pasta and sprinkled just a light bit of toasted bread crumbs on top. This was yummy and really easy to make!

Best Hamburger Ever

I followed the recipe exactly except for not using rosemary and using cheddar cheese instead of colby (I didn't have any colby on hand.) These were good and, if you like a saltier hamburger or if you love meatloaf, I'm sure you'd rate this 5 stars. I only rated it 3 because, as I discovered when I made these, I prefer my hamburgers with just beef and the toppings on top. :) But if you want to experiment with something different in a hamburger, this would be the recipe to use!

Peanut Butter Loaf

5 stars! It came out beautifully! :) Also gets 5 stars because I replaced with all whole-wheat flour and it still turned out great (few recipes do that as well as this one did!) So, here's what I did: Used whole wheat flour instead of white flour. Doubled the peanut butter to 2/3 cup. And about halved the brown sugar (1/2 cup or less) plus 1/4 cup honey. I didn't have any buttermilk, so I used regular milk. Even with all those subs, it turned out AMAZING. I know some people don't like ratings with substitutions, but I love them because it helps me alter recipes to fit my whole-wheat-only diet. :-) I found other reviewer's information very helpful and am so excited about this recipe!!! Thank you for posting it here!!! It came out moist & delicious! :-)

Peanut Butter Bread II

Followed the directions and enjoyed it, but it always came out too crumbly for my tastes and not quite moist enough. Don't get me wrong, it was still yummy! Just isn't my favorite peanut butter bread recipe.

Golden Pumpkin Rolls

WOW! I made half of this recipe with whole wheat flour, pumpkin pie spice instead of nutmeg/ginger/cloves, and they turned out so delicious and moist! The only problem I ran into was the dough didn't rise at first, so I had to mix up another package of yeast and knead it into the dough, and then it rose just fine. That was probably an error on my part though (I probably had the water too hot or needed more yeast for the whole wheat flour.) This recipe definitely deserves all 5 stars!

Macaroni and Cheese Bake

This was good! The only reason I gave it 3 stars is because it's not my favorite mac & cheese recipe. (However, for someone else it might warrant 4 or 5!) I made half the amount of pasta (whole wheat bow ties) and 1 can of cream of chicken + 3/4 cup milk. With this combination, the sauce was a nice creamy consistency. I used diced tomatoes and a good type of cheddar cheese. It was good, but I think I like recipes that include bacon and onions a little more. :)

Orzo with Parmesan and Basil

Yummy! I used to make another orzo recipe on here, but decided to give this one a try because it was a little healthier, using less butter - and boy am I glad I did! YUM. I usually add a little garlic to mine too. I made it 2 nights in a row, I liked it so much, and will probably make it again this week. When I don't have chicken broth, I use a chicken bouillon and water, like another reviewer suggested, and it turns out just as well.
