Mom's Yummy Onion Casserole

WOW! So delicious! I had to change the recipe some due to lack of ingredients in my pantry... Only had 1 onion but I still used the same amount of sauce. Cream of chicken instead of cream of mushroom (and fat free). Low-fat margarine. And since I didn't have potato chips, I used diced potatoes instead (which soaked up that extra sauce.) All I can say is... YUM YUM YUM.

Baked Potato Soup III

Great recipe for when you need baked potato soup but don't have a lot of time. I used frozen diced potatoes and just thawed them before adding them to the soup.

Blackberry Cobbler

I've gotta say - for a recipe that's so simple, this was sooo good. I made these in individual dishes so I could give them to my boyfriend for Valentine's. He loved them! Thanks for a great dessert recipe. :-)

Oatmeal Maple Syrup Muffins

Delicious! I make these with whole wheat flour and leave the rest of the ingredients the same. Sometimes I add the streusel topping from the "Brown Sugar Instant Oatmeal Muffins." I've made these several times and they always come out moist and delectable. Best muffins ever!

Pecan Pumpkin Biscuits

WOW! These are amazing! I made them with all whole wheat flower and a little extra pumpkin...And yum! These came out really moist and delicious. Couldn't ask for better pumpkin biscuits. Mmmm!

Basic Sauce for Pasta

Delicious - especially for a super easy and quick-to-make marinara-type sauce. Great for a weeknight when you don't have a ton of time to cook. I made the recipe exactly as written, except for parmesan cheese instead of cheese sauce. It was so good and great as a topping for a cubed steak parmesan that I made! Thanks for the recipe!

Ham and Noodle Casserole

This gets a high rating for being tasty and soooo easy to make. I use whole wheat egg noodles and low-fat or fat free sour cream, and 98% fat free cream of chicken soup. I also use 2% mozzarella. Even with these healthy modifications, it is still really good!

Pasta Carbonara II

This is great and really filling! I've scaled down the recipe for 1 person and it still turns out wonderful. Sometimes I cut back on butter or use a healthy type of butter and it still turns out really good. I also use whole wheat pasta - yum! This reminds me a little of a skilletini-type dish I used to order at Carraba's. The dish is no longer offered there, but this helped bring back some great memories!

Tomato and Garlic Pasta

This is delicious, easy to make, and I feel so healthy when I have it! I always use whole wheat angel hair pasta and add a dash of balsamic to the sauce per another reviewer's suggestion. Wonderful!

Quick and Easy Peanut Butter Oatmeal

It's great! I didn't use the eggs and didn't have flax seed, but followed the recipe otherwise. What a wonderful dish to make when I'm not super hungry and need a smaller, tasty dish. To make it even better, add some honey on top! I also made this once with 2/3 cup milk instead of water - yum!

Orzo with Parmesan and Basil

Yummy! I used to make another orzo recipe on here, but decided to give this one a try because it was a little healthier, using less butter - and boy am I glad I did! YUM. I usually add a little garlic to mine too. I made it 2 nights in a row, I liked it so much, and will probably make it again this week. When I don't have chicken broth, I use a chicken bouillon and water, like another reviewer suggested, and it turns out just as well.

Macaroni and Cheese Bake

This was good! The only reason I gave it 3 stars is because it's not my favorite mac & cheese recipe. (However, for someone else it might warrant 4 or 5!) I made half the amount of pasta (whole wheat bow ties) and 1 can of cream of chicken + 3/4 cup milk. With this combination, the sauce was a nice creamy consistency. I used diced tomatoes and a good type of cheddar cheese. It was good, but I think I like recipes that include bacon and onions a little more. :)

Golden Pumpkin Rolls

WOW! I made half of this recipe with whole wheat flour, pumpkin pie spice instead of nutmeg/ginger/cloves, and they turned out so delicious and moist! The only problem I ran into was the dough didn't rise at first, so I had to mix up another package of yeast and knead it into the dough, and then it rose just fine. That was probably an error on my part though (I probably had the water too hot or needed more yeast for the whole wheat flour.) This recipe definitely deserves all 5 stars!

Peanut Butter Bread II

Followed the directions and enjoyed it, but it always came out too crumbly for my tastes and not quite moist enough. Don't get me wrong, it was still yummy! Just isn't my favorite peanut butter bread recipe.

Peanut Butter Loaf

5 stars! It came out beautifully! :) Also gets 5 stars because I replaced with all whole-wheat flour and it still turned out great (few recipes do that as well as this one did!) So, here's what I did: Used whole wheat flour instead of white flour. Doubled the peanut butter to 2/3 cup. And about halved the brown sugar (1/2 cup or less) plus 1/4 cup honey. I didn't have any buttermilk, so I used regular milk. Even with all those subs, it turned out AMAZING. I know some people don't like ratings with substitutions, but I love them because it helps me alter recipes to fit my whole-wheat-only diet. :-) I found other reviewer's information very helpful and am so excited about this recipe!!! Thank you for posting it here!!! It came out moist & delicious! :-)
