My family LOVES this dish. I use 4 oz cream cheese. Add a can of chillis, a can of enchilada sauce, 3/4 can of sliced jumbo black olives and I toss in a lot more chicken. I use another can of enchilada sauce and pour some on the bottom of the casserole dish then the remaining on top of the enchiladas once rolled and in the pan. I put the cheese on top the sauce and the rest of my can of sliced olives on top of the cheese. I have made this almost weekly for my family. SOOO GOOD! Because of all the extra stuff I add I get 9 tortillas.
