Raspberry Oat Bars

Delicious. My Boyfriend who dislikes sweets give this two thumbs up. I played with the constancy a bit-adding applesauce and molasses/omitting oils. Watch it in the oven though cause my gas oven browned the sides too much and I checked it literally two minutes prior.

Caribbean Zucchini Bread

Amazingly Good. I'm not a huge bread fan, but unbelievable bread. So moist and used up those overripe zucchini/bananas and applesauce! Have to admit it smelled so good I ate a slice while still chewy and not finished baking. My honey did too! Couldn't wait! MAKE THIS!!!!

Sweet Candied Orange and Lemon Peel

Went out a picked the fruit and cut up the peel saving the flesh for lemon cookies. This is labor intensive but almost like a meditation too. Easy and beautiful. Felt like I went to a spa when I poured out the water: fresh blast of orange stream.... very wonderful!

Christmas Stollen

My first six star review! I admit I changed a few things but I credit that to preference. I made my own candied citrus peels and omitted the currants. I made one for my family and it will be my new tradition! I love this recipe and such a perfect way to remind us all of the simplicity of an older time. A toasted slice of this with coffee and an orange is a wonderful holiday suprise!

Banana Banana Bread

Amazing! I LOVE Banana bread but this way fantastic. I baked it in Mini Muffins and it was a huge hit. They're great at breakfast with the top split and butter added. Or at night add some chocolate on top and you have a healthy cupcake. Yummy!

Just like authentic Naan. My BF is a picky Indian food critic. We like authentic, not americanized ethnic foods. Try this with Sag Panner. SO good!

Kale and Spinach Saag

REVISIONS: I'm sure the original is amazing too, but a few substitutions made this the best Spinach Saag ever! No cottage cheese=used plain yogurt instead Added fried cubes of Indian Cottage Cheese/like tofu constancy : cut into 1 inch cubs fry in a pan of 1TBS olive oil til brown then put in Saag. Try it. Love it!

High Protein Peanut Butter Balls

Lovely. Exactly what I need for a quick protein boost. Peanut butter is caloric but so great not to use the blender. I cut the recipe in half since I only had one banana. I ended up with 16 nice sized balls. Math for Protein- If you use 1 cup Muscle Milk Powder/1 cup Organic Peanut Butter from Costco/1 Banana you end up with around 10 grams of protein/10 grams of fat per ball.

Great copy recipe. My family loved these better then the store bought ones! If you like a creamy version try powdered sugar-or crunchy use granulated sugar.

Applesauce

Rarely I say this, perfect! Easy to read and follow recipe. I added a pinch of allspice as well. My only note: if you can crush your own clove/allspice. The ground ones loose the rich oils released when you crush them!
