Zucchini Patties
This was okay. I made it as is, but I think I expected it to be crispy since it was pan-fried, but it wasn't. I think there was just way too much cheese for my liking. I think I would try to make these again but maybe with just a bit of parmesan.

Best Big, Fat, Chewy Chocolate Chip Cookie
This is essentially the recipe that I use (I was going to submit my own, but this one is almost the exact same). The only differences are that I use a full cup of melted butter and 2 full eggs. And you have to refrigerate the dough for an hour or two!!! I obviously make smaller cookies as I get about 30, and therefore I only need to bake for 10 minutes (they look a bit under-cooked in the center but that's okay!). They are so soft and chewy (and they stay soft) and the closest thing to a Subway cookie that I've found.

Spicy Sweet Potato Soup
I hate rating when I make substitutions but here goes. I basically made it as is except I didn't use sour cream and I only put a heaping tbsp of peanut butter. I could not get the peanut butter to blend into the soup. Maybe because it was natural? But it stayed in chunks so every so often you'd just get a mouthful of PB. I ended up adding a can of coconut milk because I just didn't like the flavor of it, which helped quite a bit but still not my favorite soup.
