About this Cook
Up until August 2011 I was a full time Wife and Mom of 2 amazing kids with a full time job outside the home. Due to a recent job transfer for my husband I'm enjoying a bit of stay at home mom time which means more time to play with my family and in the kitchen!
My favorite things to cook
Appetizers - especially anything with Cheese... Cheesecakes, Pies, Italian food and Mexican food.
My favorite family cooking traditions
Cook it with LOVE... The more people in the kitchen sharing the experience the more we enjoy the meal.

Butternut Squash Soup
This was a huge hit for our family from our 5 year old to my husband. I did make some changes after reading reviews. I used about 4 cups of Chicken Broth instead of the boullion and water. I also diced up 6 small red potatoes and boiled in the broth. I used 2 butternut squashed, halved them sprayed with olive oil then roasted upside down with a clove of garlic under each half for 30 minutes at 400 degrees. I added the roasted squash to the broth and boiled just until everything was tender. I also used Neufchatel instead of regular cream cheese. I will make this again and again.

Mouth-Watering Stuffed Mushrooms
Made these for a dinner party recently and they were a hit. I also shredded extra parmesian on top prior baking as I cannot have enough cheese.

Veronica's Apple Pancakes
I made these today for our "breakfast for dinner" theme and myself and my 2 kids were both really happy with them. I will do these again but I will probably add extra cinnamon and vanilla as some of the other review mention. But there is rarely enough cinnamon for me. My 7 year old loved that she could get flavor and the texgture from the apple - may not have followed the recipe on the amount of apple - just shredded up a green apple off our tree.
