I have made this a few times now and each time I get rave reviews!! My secret is I add a splash of tequila to the marinade and let it marinade longer than 30 minutes....who ever heard of a margarita without a little tequila??

Almond Tea Cakes

Very tasty and presentable....a lot of effort to make them though I thought. The recipe as written made me 39 but I admit I made most of mine to dome and included about 3/4 teaspoon filling in each one. They were delicious though and when you have the time, well worth the effort!

Brandy Chicken

A little bland but if you mix it with some good comfort food, it could be a hit with your younger family members. Must cook chicken long enough in the oven to absorb some of the flavors and moisture....really, really moist which is fantastic. Will try again but may add some seasoning to pop a little flavor out of it next time.

Rubbed and Grilled Pork Loin

Fantastic!! Made as written but without cumin cause I didn't have any. Wow...this beats regular pork chops any day!! So moist inside and tasty with the juices poured over it!!!

Boneless Pork Loin Roast with Herbed Pepper Rub

Good but took a lot longer to cook than I thought originally. Cooked over potatoes and onions as others suggested but they were dried out in the end. Roast was moist though!!

Chicken Satay

This was a great easy recipe for a large group appetizer party. I also added more peanut butter than called for but otherwise followed it exactly!! Served over a bed of jasmine rice. Fantastic!!

Seared Sea Scallops

Love these but I made one major change when I make them. I make the seasoning exactly as outlined, sear them exactly as recipe calls for too but at the end, once they are browned, I pour orange juice over them in the pan and let boil to a reduction. Adds a little natural sauce and a meal that isn't made with butter!! Love them!! (Other hint is that I let the olive oil get REALLY hot before throwing the scallops in and I throw them all in one pan vs the 4 at a time bit).

Jambalasta

Made a quick version of this tonight when I realized my husband would appreciate this more than plain old kielbasa.....made it with yellow rice though which was fantastic (vs pasta). I also skipped the chicken and the corn starch. Used cocktail sauce instead of hot sauce cause that is what we had and it worked great just the same. Spicy though as is everything that includes cayenne....just modify the amount used to your spice factor! Great for a speedy jambalya!

Santa's Favorite Cake

Big hit at the Holiday party as the red stood out very well!!! I found a cupcake box with yellow cake in a 9 oz size that worked perfectly and I also added an extra tbl of veggie oil to the white cake mix to keep it all moist. Didn't have a problem with the cake breaking at all.....found the swirling a little challenging but it worked out in the end with me doing very little mixing to ensure it didn't turn into a pink cake overall like some of the pictures shown. Great treat!

Butternut Squash with Onions and Pecans

Good for a seasonal and colorful addition to your table. Not so sure about the make it 4 hours ahead part though as I find that the longer it sits, the browner and mushier it gets. Best served right from the stove to the table.

Rempel Family Meatloaf

Was really good and pretty easy. I did not have the grease problem....actually the opposite. This was the dryest meatloaf I made in a long time and it took a lot to clean out that pan (3 days worth of soaking for some reason!) but it was delicious!

Strawberry Spinach Salad I

People raved when I brought this to their house and requested the recipe be sent. The idea for the blender is good but I found that most of the seeds then get stuck to the side of the blender so I blend with all but the seeds and then add them in once blended.

Red Skinned Potato Salad

oh my......delissssh! I made it with 1 lb bag of small reds, 2 eggs, 6 pieces of bacon, 1 celery stalk (which I almost forgot), some red onion and green scallions. Mayo, salt and pepper.....fantastic!!! btw, we had peas on the side which mixed in well too so I threw the left overs in for tomorrow!!! Will be making this for a BBQ of the future! (Key though as always is to make ahead (around noon) so that it all has enough time to chill!)

Mocha Chocolate Chip Banana Muffins

I made a few adjustments only because of some of the other reviews I read and what I had on hand. I used the full cup of margarine (cause I had it which is rare), up'd the instant coffee to 3T and 3t of water, used only 1 cup of sugar (white) and used 4 bananas instead of 3 cause what was I going to do with the last banana all by itself! Anyway, this recipe generated 24 mini muffins (cooked for 15 minutes at 350 = perfect) and 12 regular size muffins (cooked for the 25 min at 350 that the recipe called for). Yummy and moist while they are hot and I am assuming they will be just as good once they cool down!
